- 1 pound bacon, diced
- 3 cups low-fat milk
- 2 (8 ounce) packages cream cheese, softened
- 4 (10.75 ounce) cans cream of potato soup (such as Campbell's®)
- 1 (10.75 ounce) can reduced-fat, reduced-sodium cream of mushroom soup, undiluted
- 1 (15.25 ounce) can niblet corn, drained
- 4 cups finely diced halibut
- 8 ounces sliced fresh mushrooms
- 10 green onions with tops, diced, or more to taste
- 2 cloves garlic, or more to taste
- 1 pinch cayenne pepper

- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned and crispy, about 10 minutes. Reserve drippings in the skillet, and drain bacon slices on paper towels.
- Combine milk and cream cheese in a blender and process.
- Combine cream of potato soup, cream of mushroom soup, corn, and cream cheese mixture in a large pot over low heat. Bring to a simmer, about 5 minutes. Add cooked bacon.
- Heat skillet with bacon drippings over medium heat. Add halibut, mushrooms, green onions, and garlic. Cook and stir until tender, 5 to 7 minutes. Transfer contents of skillet to the pot with the soup.
- Season soup with cayenne pepper and cook until heated through, about 5 minutes more.

How to cook:
- MELT the butter in a large saucepan and saute the leek, celery and garlic for 4 minutes or until softened. Add the flour and cook for 1 minute. Stir in the milk, stock and brandy; bring to the boil and stir until thickened. Reduce the heat then add the potatoes and thyme, simmer for 10 minutes or until potatoes are just tender.
- ADD the corn and seafood; simmer for 5 minutes until seafood is just cooked through.
- STIR the PHILLY into the chowder until smooth. Simmer for a further 5 minutes until well heated. Season, then ladle into serving bowls and garnish with thyme sprigs. Serve immediately.

- Dice all the veggies into even-sized pieces.
- Dice bacon into small pieces. In a soup pot or Dutch oven, brown the bacon until it turns crispy. Remove it from the pot and set it aside. Leave the drippings in the pan.
- Add the diced onions into the pot with the bacon drippings and cook them until they soften. Next, add the carrots, celery, and green onions and cook everything together for a few minutes.
- Add chicken broth to the pot, followed by the cream cheese and heavy whipping cream.
- Add the diced potatoes into the soup and 1-2 quarts of boiling water, depending on the consistency and thickness you prefer. Season the soup with salt, pepper, and garlic powder. Drain the canned clams of their juices and add them to the soup. Simmer for 20-30 minutes.
- Top each bowl of soup with crispy bacon and enjoy!
