Easy Seedless Blackberry Jam

Easy Seedless Blackberry Jam
This delicious, small batch Easy Seedless Blackberry Jam is made with just 3 ingredients, blackberries, granulated sugar and freshly squeezed lemon juice and no pectin.

Ingredients:
  • 370 g blackberries (rinsed and dried of excess water)
  • 320 g granulated sugar
  • 1 tablespoon 15 ml lemon juice
How to cook:
  1. Place blackberries, granulated sugar and lemon juice into a preserving pan or similar.
  2. Place pan over a low heat and mash the blackberries thoroughly. (Do not allow to simmer).
  3. Continue gently heating and stirring with a wooden spoon until the sugar dissolves completely. (Listen out for any crunching against the spoon).
  4. Pour blackberry mixture into a sieve over a glass bowl (using a spatula to scrape any seed residue left in the pan).
  5. Use the back of a large metal spoon to push the pulp through the sieve until left with a dry seedy residue. (Be patient, takes about 5 minutes).
  6. Pour the sieved juices back into the pan.
  7. Turn the heat to high and bring to a rolling boil and time for 90 seconds. (Mine was ready in just under 2 minutes). If you have a digital thermometer you can use that and test when mixture reaches 105C.
  8. Remove from heat and test for set by places a few drops of jam on a chilled saucer and place in fridge for 30 seconds.
  9. Push a finger through the jam and if it forms gentle crinkles and is tacky then it has reached setting point.
  10. If setting point hasn’t been reached then bring the jam back to a rolling boil for another 15 – 30 seconds and repeat test until ready. (My first attempt was over done at 4 minutes so just be aware that this jam sets very quickly).
  11. Then pot up by pouring the jam into a hot sterilised jar/s using a jam funnel if you have one.
  12. Seal with lid/s immediately.
  13. Makes approximately 300 ml of jam (just over one small jar).

  • 2 1/2 pounds fresh blackberries
  • 1 1/2 cups granulated sugar
  • 1 tablespoon lemon or lime juice ((juice of half a lime or lemon))

How to cook:
  1. Rinse the berries in cool water, and toss in sugar. Allow to macerate, refrigerated, overnight.
  2. In a large saute pan, warm the berries over medium heat, until softened.
  3. Press the mixture through a fine mesh sieve or food mill, to remove the seeds.
  4. Submerge the jars in a large pot of boiling water, for 10 minutes. Keep warm.
  5. Place the puree back in the saute pan, and heat, over medium heat, until thickened.
  6. Place the lids into simmering water to soften the seal.
  7. Stir in the citrus juice, taste the jam, and adjust seasoning, if needed. When it has reached the desired consistency, spoon it into the hot jars.
  8. Wipe the edge of each jar with a clean cloth, and place the lid on. Screw on the rings and submerge in boiling water for 10 minutes.
  9. Remove with tongs, and allow to cool.
Notes: Blackberry Jam (Easy No Pectin!), You can make blackberry jam seedless. It's not a hard process but can take a little time. To make seedless jam, you want to push the jam through

  • 2 Tablespoons honey

How to cook:
  1. Place the berries in a saucepan over low heat. Stir and heat until they soften and release their juice.
  2. Mash the berries with a fork or potato masher. Remove the pan from the heat.
  3. Press the mixture one spoonful at a time through a fine mesh sieve to remove the seeds. Use the back of the spoon to press the berry mixture through. You should get about 3/4 cup juice.
  4. Mix 2 Tablespoons of the juice with the cornstarch.
  5. Place the rest of the blackberry juice in the pan with the honey. Slowly stir in the cornstarch mixture. Heat over medium heat until thickened. (about 4 minutes)
  6. Remove the pan from the heat and let cool before placing in a jar and refrigerating.

  • equal weights fresh blackberries and sugar
  • 2 Tablespoons lemon juice
  • the peels and cores of two apples, or commercial pectin
How to cook:
  1. Run blackberries through a food mill to remove most of the seeds.
  2. Weigh the blackberry puree and add an equal amount (by weight) of sugar.
  3. Add the peels and cores of two apples to the saucepan (or add commercial pectin) and bring to a boil over high heat, stirring regularly.
  4. Cook until the mixture reaches 220 degrees Fahrenheit (105 Celcius)
