- 2 tbsp butter
- 1 onion, diced fine
- 1/4 cup garlic, diced
- 1 cup chicken stock
- 8 oz neufchatel cheese
- 1/2 cup heavy cream or half and half
- 1 cup parmesan cheese, grated
- 1 lb shrimp
- 4 zucchini, spiralized

- Heat butter in large, heavy pot on high heat until melted and foamy.
- Reduce heat to medium and add onion and garlic to pan, and cook until soft and browned, about 3 minutes. Stir occasionally to prevent burning- watch to be sure garlic does not overheat and smell bitter.
- Add zucchini and stock to pan and toss evenly, bringing to a rapid boil.
- Add in cream cheese and melt, stirring often to break it up around the pan.
- Turn heat off, and add in cream and parmesan cheese, whisking as you pour it in.
- Turn heat back on to medium high once cream is incorporated, adding shrimp and grated parmesan with it.
- Cook down until sauce is reduced and shrimp is pink and opaque, about 5 minutes. Do not over cook shrimp.
- Serve immediately.

- 1 tablespoon extra virgin olive oil (*divided )
- 16 oz. jumbo shrimp (raw) (*thawed, peeled and deveined)
- 1 cup heavy cream
- 1 teaspoon Italian seasonings

- ¼ teaspoon pepper
- ¼ teaspoon garlic powder
- 1 teaspoon fresh oregano leaves (*roughly chopped *optional)

- Place a large pot of HOT salted water on the stovetop and turn heat to high. While waiting for water to boil, spiralize zucchini.
- Remove boiling water from heat. Once water stops boiling, add zucchini noodles to the pot and soak for 10 minutes.
- Drizzle ½ tablespoon of olive oil into a sauté pan. Place on medium low heat.
- In a small bowl, combine shrimp and remaining olive oil. Sprinkle with salt and pepper and mix until shrimp are well coated.
- Sauté shrimp for about 90 seconds on each side, until fully cooked through, and set aside. (*Tip: it's important to avoid overcrowding your pan, as this can result in a boiling effect from excess moisture. I typically cook my shrimp in two shifts and leave an inch between each).
- Turn stovetop heat to low.
- Measure heavy cream, Italian seasonings, salt, pepper, garlic powder, fresh oregano and gluten free flour into a small mixing bowl and whisk well. Pour mixture into the empty sauté pan and stir until it begins to thicken. Add cheese and continue stirring until melted. (*Tip: sauce will be very thick. Zoodles contain more moisture than traditional pasta. Once you stir them in, your sauce will thin out a bit. Avoid the temptation to thin sauce with additional cream)!
- Drain zucchini noodles and pat dry with a clean kitchen towel. Stir zoodles and shrimp into sauce until all ingredients are well combined.
- Plate and enjoy!

- Line a sheet pan with paper towels. Place the zucchini noodles on the paper towels. Sprinkle with the 1/4 teaspoon of salt. Allow the zucchini to sit for 30 minutes to sweat out excess water.
- Heat a skillet on medium-high heat. Add the olive oil, shrimp, and minced garlic. Cook each side of the shrimp for 1-2 minutes until bright pink.
- Remove the shrimp from the skillet and set aside on a plate.
- Add the butter to the skillet on medium heat. Allow the butter to partially melt and then add the chunks of cream cheese, Parmesan reggiano, heavy cream, red pepper flakes, and salt and pepper to taste.
- Stir continuously until the cheese has melted. The cream cheese may take some time to dissolve.
- Add the shrimp and zucchini noodles to the pan. Stir to coat the zucchini. Cook for 3-4 minutes until the zucchini softens.
- Sprinkle with parsley to serve.

- Prepare the zucchini and yellow squash by cutting them into thick zoodles. (about -4 cups of spiralized zucchini and yellow squash)
- Rinse the spiralized vegetables under cool water and drain well. Set aside and allow to continue to drain.
- Heat a large skillet on medium high.
- Sauté
- Once hot add the SeaPak Shrimp Scampi to the pan. Saute 5 minutes occasionally tossing.
- Toss
- After five minutes add the spiralized vegetables and Alfredo sauce to the pan. Toss the vegetables, shrimp and Alfredo sauce for 4 or 5 minutes to completely cook the shrimp. (Shrimp is fully cooked when the center of the largest shrimp has reach 165 F. degrees.)
- Serve
- Transfer the fully cooked Zucchini Shrimp Scampi Alfredo to a serving bowl and sprinkle with some freshly grated Parmesan cheese and freshly chopped parsley.
