  • 1 tablespoon avocado oil (or extra virgin olive oil)
  • 3 stalks celery (diced)
  • 1 large bell pepper (diced)
  • 1 teaspoon minced garlic
  • 1 1/2 tablespoons cajun seasoning (see homemade recipe below (adjust to taste))
  • 14 ounce can diced tomatoes
  • 8 ounce can tomato sauce
  • 2 cups low sodium chicken broth
  • 1 lb boneless skinless chicken breast (cut into 1 inch pieces)
  • 1 teaspoon kosher salt
  • 1 lb raw deveined tailless shrimp
  • 3 cups cauliflower rice

How to cook:
  1. Turn on the Saute function on your Instant Pot. Add the oil to the pot.
  2. Add the onion and celery to the Pot, cooking and stirring for 4-5 minutes, until beginning to soften. Turn off the Saute function.
  3. Add the bell pepper, garlic, seasoning, diced tomatoes, tomato sauce, broth, chicken breast, and salt in the Instant Pot. Stir to combine.
  4. Seal the lid and cook on Manual setting for 10 minutes. When cycle is complete, quick release the pressure.
  5. Press the Saute button. Stir in the shrimp and cauliflower rice.
  6. Simmer for 5 minutes until shrimp are pink and cooked through.

How to cook:
  1. First gather all of your ingredients in one place.
  2. Then, in a medium-size sauce pot you will heat up some olive oil over medium-high heat. You will then add in your garlic and chicken and cook for 5 minutes.
  3. The next step is to add in your chopped green bell peppers and cook while stirring for more 5 minutes.
  4. Then add Cajun seasoning and Gumbo file. Cook and stir for 2-3 minutes.
  5. Pour in strained tomatoes and beef stock, making sure to stir so that you scrape any browned bits of the seasoning. After this, you will then reduce the heat to medium and simmer for 5 minutes.
  6. Stir in your sausage and simmer for about 20-25 minutes.

How to cook:
  1. In a large Dutch oven, heat the oil over medium-high. Add the sausage rounds in a single layer and cook each side for about 4 minutes to brown. Cook in separate batches if needed. Transfer the sausage to a paper towel lined plate.
  2. Reduce heat to medium. Add the shrimp to the pan and cook until opaque, about 2-3 minutes per side. Transfer shrimp to a plate and set aside.
  3. Pour 1/3 cup chicken broth into the pot (set aside remaining broth) to deglaze and scrape up any stuck bits. Add the garlic and cook for 30 seconds.
  4. Add the celery, onion and bell pepper to the pot. Cook for 5 minutes over medium heat, stirring occasionally. Add the green onion, parsley, diced tomatoes, remaining chicken broth, Cajun spice and salt.
  5. Increase the heat to high and bring the mixture to a boil, then reduce the temperature to low. Cover the pot with a lid and let it simmer for 30 minutes. Stir occasionally.
  6. Add the pre-cooked chicken, sausage and shrimp to the pot.
  7. Remove the gumbo from the heat and stir in the filé powder. Taste and adjust, adding more Cajun spice or salt and pepper, if needed.
  8. Cover the pot and let it sit for 10 minutes.
  9. Ladle into bowls to serve. Top with a sprinkle of filé powder if desired.
