- 1/2 medium yellow onion (diced)
- 1 tablespoon avocado oil (or extra virgin olive oil)
- 3 stalks celery (diced)
- 1 large bell pepper (diced)
- 1 teaspoon minced garlic
- 1 1/2 tablespoons cajun seasoning (see homemade recipe below (adjust to taste))
- 14 ounce can diced tomatoes
- 8 ounce can tomato sauce
- 2 cups low sodium chicken broth
- 1 lb boneless skinless chicken breast (cut into 1 inch pieces)
- 1 teaspoon kosher salt
- 1 lb raw deveined tailless shrimp
- 3 cups cauliflower rice

- Turn on the Saute function on your Instant Pot. Add the oil to the pot.
- Add the onion and celery to the Pot, cooking and stirring for 4-5 minutes, until beginning to soften. Turn off the Saute function.
- Add the bell pepper, garlic, seasoning, diced tomatoes, tomato sauce, broth, chicken breast, and salt in the Instant Pot. Stir to combine.
- Seal the lid and cook on Manual setting for 10 minutes. When cycle is complete, quick release the pressure.
- Press the Saute button. Stir in the shrimp and cauliflower rice.
- Simmer for 5 minutes until shrimp are pink and cooked through.

- First gather all of your ingredients in one place.

- In a large Dutch oven, heat the oil over medium-high. Add the sausage rounds in a single layer and cook each side for about 4 minutes to brown. Cook in separate batches if needed. Transfer the sausage to a paper towel lined plate.
- Reduce heat to medium. Add the shrimp to the pan and cook until opaque, about 2-3 minutes per side. Transfer shrimp to a plate and set aside.
- Pour 1/3 cup chicken broth into the pot (set aside remaining broth) to deglaze and scrape up any stuck bits. Add the garlic and cook for 30 seconds.
- Add the celery, onion and bell pepper to the pot. Cook for 5 minutes over medium heat, stirring occasionally. Add the green onion, parsley, diced tomatoes, remaining chicken broth, Cajun spice and salt.
- Increase the heat to high and bring the mixture to a boil, then reduce the temperature to low. Cover the pot with a lid and let it simmer for 30 minutes. Stir occasionally.
- Add the pre-cooked chicken, sausage and shrimp to the pot.
- Remove the gumbo from the heat and stir in the filé powder. Taste and adjust, adding more Cajun spice or salt and pepper, if needed.
- Cover the pot and let it sit for 10 minutes.
- Ladle into bowls to serve. Top with a sprinkle of filé powder if desired.

- In the food processor, add 6 garlic cloves, 2 green onions, bell peppers (cut in half and seeds removed), and celery sticks.Roughly process in the food processor and set aside. Slice the smoked beef and set aside.

- In a large stockpot or pan, heat the 1/4 cup oil on medium-high heat. When heated though, add the sausage and cook until golden brown on all sides. When the sausage is cooked, remove the sausage and set it aside in a bowl.In the same pot, add the celery, garlic and onion mixture. Cook for 1 minute. Stirring occasionally. Then add the tomatoes. Stir and cook for an additional 1 minute. Next, add in the okra. Stir and cover. Cook for 10 minutes. Then add in the potato starch (3 tbsp.). Stir and deglaze slowly with 2 cups of water. Stir and let simmer for 5 minutes. Add in the sausage and 6 cups of water. Stir and add the 2 Tbsp. Cajun seasoning. Stir Well. Cover and let simmer for 20 minutes (medium-high heat). After 20 minutes, add 1 Tsp. Kosher salt and 1 Tsp. Cajun Seasoning (or season to taste). Add 6 Tbsp. Potato starch and 8 tbsp. of water in a bowl, mix well and pour the mixture in the gumbo pot. Add the shrimp. Lower the heat to medium-low. Stir well to combine and simmer for 25 minutes. Serve hot with cauliflower rice and enjoy.
