  • 4 ounces reduced-fat cream cheese
  • 1/4 cup shredded reduced-fat cheddar cheese
  • 3 tablespoons white wine or fat-free milk
  • 1/2 cup chopped cooked peeled shrimp
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 to 1/2 teaspoon dried thyme
  • 2 packages (1.9 ounces each) frozen miniature phyllo tart shells

How to cook:
  1. In a small bowl, combine the cream cheese, cheddar cheese and wine or milk. Stir in the shrimp, onion powder, salt and thyme. Cover and refrigerate for at least 2 hours to allow flavors to blend.
  2. Spoon filling by heaping teaspoonfuls into tart shells. Place on an ungreased baking sheet. Bake at 350° for 8-12 minutes or until shells are lightly browned. Serve warm. Refrigerate leftovers.

  • 30 medium shrimp, peeled and deveined
  • 1/4 teaspoon cumin
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon crushed red pepper
  • Kosher salt and pepper, to taste
  • 1/4 cup tequila
  • 1/2 lime, juiced
  • 1/4 cup minced cilantro
  • 4 ounces sour cream
  • 1 lime, zested
  • 1 lime, juiced
  • 2 teaspoons chopped cilantro
  • 30 Athens mini fillo shells, toasted

How to cook:
  1. For shrimp:
  2. In a medium sized bowl add shrimp and toss with cumin, smoked paprika, crushed red pepper, kosher salt and pepper.
  3. In a large pan set over medium-high heat add shrimp, tequila and lime juice. Cook until the shrimp is fully cooked and pink in color, remove from the heat. Toss with minced cilantro.

  • 1 box phyllo cups (15 per box)
  • 2 ounces cream cheese (softened to room temperature)
  • 1 tablespoon mayonnaise
  • pinch black pepper
  • 1/8 teaspoon Old Bay seafood seasoning
  • ¼ teaspoon fresh lemon zest
  • 4-5 large pre-cooked shrimp (peeled, tails off, deveined, and chopped finely)
  • 2 tablespoons chopped fresh parsley
  • ½ cup ketchup
  • 1 tablespoon horseradish (or according to your taste)

How to cook:
  1. In a medium bowl, stir together the cream cheese, mayonnaise, black pepper, Old Bay, and lemon zest.

Shrimp Salad Phyllo Bites

Ingredients:
  • 5 sheets puff pastry, thawed
  • 2 Tbsp melted butter
  • ½ cup mayonnaise
  • 1 Tbsp pickle juice
  • 1-2 tsp fresh dill, chopped
  • Salt and pepper, to taste
  • A few drops of lemon juice
  • ¼-1/2 tsp hot sauce (optional)
  • 340g small shrimp, peeled and rinsed
  • 2 celery stalks, sliced down the middle, then finely chopped
How to cook:
  1. Preheat oven to 375°F.
  2. Lay one sheet of phyllo pastry on a clean counter, then brush with melted butter. Lay a second sheet of phyllo over top, then brush with butter. Repeat until alll 5 sheets are layered on top of one another.
  3. Using a pizza cutter, cut lengthwise into 4 strips, and crosswise into 6 strips, to make 24 equal squares. Press each square into the cup of a mini muffin pan. Bake for 7 minutes until lightly browned. Let cool completely.
  4. In a medium bowl, combine the mayonnaise, pickle juice, dill, salt, pepper, lemon juice, and hot sauce until smooth. Stir in the shrimp and celery and toss until well coated.
  5. Transfer shrimp mixture to the phyllo cups. Refrigerate until ready to serve.
