Ingredients:
- 3 cups of okra
- 1 lb sausage (sliced)
- 1 lb shrimp
- 1 diced onion
- 1 diced bell pepper
- 1 clove of garlic (chopped or minced)
- 2 tablespoons butter
- 1/2 cup chicken stock
- 1 can diced tomatoes (drained)
- 2 T tomato paste
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 T cajun seasoning
- 1 tsp Accent
How to cook:
- Slice sausage and bake in the oven with onion, pepper, and garlic for 7-8 mins
- Meanwhile, in a skillet, add okra and tomatoes and fry until slime is no longer visible
- Remove sausage and veggies from the oven and add it to the okra
- Stir in the tomato paste
- Pour in the stock
- Stir well, lower heat, and cover skillet with the lid leaving a small crack
- Cook for 20 or until liquid reduces
- Add in shrimp and cook for 5-7 mins. Be careful not to overcook.
- Serve over warm rice
- Enjoy!

- 8 ounces large peeled and deveined raw shrimp, tail-on
- 8 ounces andouille sausage, sliced into 1⁄2-inch rounds
- 6 ounces small okra pods, halved lengthwise (about 1 1⁄2 cups)
- 2 tablespoons olive oil
- 2 teaspoons Cajun seasoning (such as Slap Ya Mama)
- 1/2 teaspoon black pepper
- 2 tablespoons salted butter, melted
- 1 teaspoon lemon juice (from 1 lemon)
- 1 teaspoon hot sauce (such as Crystal)
- Lemon wedges
How to cook:
- Preheat grill to high (450°F to 500°F); or heat a grill pan over high, and lightly grease. Combine shrimp, sausage, okra, olive oil, Cajun seasoning, and black pepper in a large bowl; toss to coat. Thread mixture onto 8 (8-inch) skewers, with sausage rounds inside shrimp and alternating with okra slices.
- Place kebabs on lightly greased grill grate or in grill pan. Grill, uncovered, until okra is charred and shrimp is cooked through, about 1 1⁄2 minutes per side. Transfer kebabs to a serving plate. Stir together butter, lemon juice, and hot sauce; brush on kebabs. Serve with lemon wedges.

- Slowly stir the flour into heated oil in a heavy cast iron skillet. Continue to stir until the flour is dark brown. Add the next 4 ingredients; stir until onions are clear. Add tomato paste and a cup of water. Add okra and tomatoes. Cook slowly, adding all the water and shrimp stock -a little at a time. Stir in sugar & creole seasoning. Cook for about an hour on a low fire, stirring occasionally to prevent sticking to the bottom of pot; adding water if necessary.
- Add the shrimp ,sausage, parsley and the bay leaves. Cook another 30 minutes to an hour, adding seasoning to taste. Serve over boiled or steamed rice.
