Creamed Spinach Tortellini with Seasoned Shrimp

Ingredients:
  • 1 lb of cheese tortellini (cooked & drained)
  • 3 tbsp butter
  • 2 tbsp flour
  • 1 1/2 cups half & half
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp freshly ground black pepper
  • 1/4 tsp nutmeg
  • 1 cup of shredded Parmesan cheese
  • 4 oz cream cheese (softened)
  • 1/2 cup of crumbled smoked Gouda cheese
  • 16 oz of fresh baby spinach (washed and dried)
  • pinch of red pepper flakes
  • 1 lb medium-large shrimp (peeled and deveined)
  • 1 tbsp Old Bay Seasoning
  • 1/2 tsp salt
  • 1 1/2 tbsp olive oil
How to cook:
  1. To Make The Creamed Spinach Tortellini
  2. In a large skillet, over medium heat, melt the butter. Whisk in the flour and let it cook, stirring occasionally, for about a minute to cook out the floury taste.
  3. Turn the heat up to high and stir in the half and half, a little bit at a time, adding more each time the mixture thickens and comes back together. Once it's all incorporated and the mixture's begun to thicken a bit, reduce the heat to medium again.
  4. Stir in all of the remaining ingredients EXCEPT the tortellini, until the cheese is completely melted and the spinach has begun to wilt slightly.
  5. Toss the cooked tortellini into the creamed spinach mixture until evenly coated.
  6. Serve as is, or reduce the heat to low and stir occasionally, while you prepare the shrimp.
  7. To Make The Seasoned Shrimp
  8. In a medium sized mixing bowl, toss the shrimp together with the Old Bay, salt, and olive oil.
  9. Heat a large skillet over medium high heat. Add the seasoned shrimp to the skillet, cooking on both sides, just until cooked through. Remove the skillet from heat immediately to prevent over-cooking.
  10. Ladle the tortellini mixture into bowls to serve, and top each bowl with a generous helping of shrimp.
  11. Enjoy immediately.

  • 1 cup frozen peas
  • 3 tablespoons olive oil, divided
  • 1 pound uncooked shrimp (31-40 per pound), peeled and deveined
  • 2 garlic cloves, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon pepper

How to cook:
  1. Cook tortellini according to package directions, adding peas during the last 5 minutes of cooking.
  2. Meanwhile, in a large nonstick skillet, heat 2 tablespoons oil over medium-high heat. Add shrimp; cook and stir 2 minutes. Add garlic; cook 1-2 minutes longer or until shrimp turn pink.
  3. Drain tortellini mixture; add to skillet. Stir in salt, thyme, pepper and remaining oil; toss to coat.

One Pot Shrimp, Spinach and Tortellini a la Vodka

  • 1 (14 oz) bag frozen tortellini
  • 1 tbsp olive oil
  • ½ lb medium peeled and deveined shrimp
  • 2 tsp minced garlic
  • 1 tsp Italian seasoning
  • ¼ tsp red pepper flakes
  • 1 ½ cups marinara sauce
  • ½ cup heavy cream
  • 4 oz fresh spinach (about 4 cups)
How to cook:
  1. Bring a large pot of water to a boil over high heat. Cook tortellini according to package directions and drain.
  2. Return pot back to the stove and reduce heat to medium high. Add the olive oil, shrimp, garlic, Italians seasoning and red pepper flakes. Cook for 3-4 minutes stirring occasionally, or until shrimp is pink and firm.
  3. Add the cream and marinara sauce. Bring liquid to a boil and reduce heat to medium. Add the cooked tortellini and spinach and cook in the sauce for 2-3 minutes. Let stand for another few minutes before bowling up. Enjoy!

  • 3 cups cheese filled tortellini
  • 1 tablespoon olive oil
  • 1 lb shrimp, peeled and deveined (tails removed if desired)
  • 2 cups baby spinach
  • 1 jar Alfredo sauce ( 16 oz )
  • 1/4 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • salt and pepper to taste
How to cook:
  1. Cook tortellini pasta according to package instructions.
  2. In a large skillet over medium heat, cook shrimp in 1 tablespoon of olive oil for 3 minutes on each side.
  3. Remove shrimp from skillet and set aside. Add spinach, Alfredo sauce, and seasonings to skillet and cook until spinach is wilted. Be sure to stir so the spinach wilts evenly.
  4. Add shrimp and tortellini to skillet with the spinach and Alfredo sauce and toss to combine.
  5. Take skillet off the heat and serve with garlic bread or a baguette. Enjoy!
