Easy Low-Fat Vanilla White Cake
Don't miss out on birthday cake-- but miss out on the saturated fat and calories! I used pourable egg whites for this recipe, if you use real eggs for this 2 to 2.5 egg whites will do fine. Regular pourable egg substitute like store-brand or EggBeaters also works. I used Recipe #411869 for baking powder for added health quotient. The sunflower oil is Vitamin E rich and adds a nice clean taste to the batter. I'm sure lavender sugar would taste awesome in this and there is just enough sugar for sweetness but the cake isn't weighed down by it.

  • 3 tablespoons sunflower oil
  • 6 tablespoons applesauce
  • 3/4 cup sugar
  • 2/3 cup egg white
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour, sifted

  • 1 dash salt

How to cook:
  1. Whisk the oil, applesauce, and sugar together.
  2. Beat in the egg whites and vanilla.
  3. Sift the flour, salt (just 2-3 shakes), and baking powder together.
  4. Gradually beat it into the batter.
  5. Grease an 11 x 7 baking dish with cooking spray and lightly dust with flour, pour the batter into it and smooth it out before putting it in the oven.
  6. Bake at 350F for 20-25 minutes or until a knife/cake tester comes out clean in the center.
  7. Wait for it to cool before frosting. Can be cut into about 3 rows of 4 pieces.

  • 1 box white cake mix
  • 1/3 cup oil (Olive oil, canola, grapeseed, and avocado oil are great options.)
  • 3 egg whites (from whole eggs, not the carton of egg whites)
  • 6 oz box strawberry jello (I use large box of sugar-free jello for a lighter option)
  • 1 cups boiling water
  • 1/2 cup cold water
  • 1 cup cold milk (You can use low-fat milk to lighten it up)
  • 3.4 oz pudding (cheesecake, vanilla, and white chocolate are great options. I used sugar-free to reduce calories and sugar)
  • 1 tsp vanilla extract
  • confectioners sugar to taste (I leave it out completely)

How to cook:
  1. Combine the oil, egg whites, cake mix, and amount of water as directed on the box and mix until combined.
  2. Pour into a 9x13 baking pan sprayed with baking cooking spray and bake according to package directions (since this can vary slightly per mix)
  3. Allow the cake to cool to room temperature.
  4. While cake is cooling, mix the jello with the boiling water until dissolved and add the 1/2 cup of cold water.
  5. Prick holes in the cake with a large skewer or fork every two inches being careful not to go all the way to the bottom. Pour jello mixture over the cake.
  6. Refrigerate uncovered overnight, or at least two hours.
  7. Mix last 5 ingredients together and spread on cake. Refrigerate until served. Store in the refrigerator and garnish with fresh strawberries, if desired.
