  • 2 bananas (the riper, the better)
  • 160g oats
  • 1/2 tsp cinnamon
  • 1 tsp honey

How to cook:
  1. Preheat your oven to 180°C and line a baking tray with baking paper.
  2. Mash the bananas in a bowl with a spoon or a fork. Add your oats and mix until fully combined.
  3. Add in any additions to suit your tastebuds. I've used cinnamon and honey here. But you can add whatever you like here. I like adding raisins, blueberries, orange zest and chopped pecan nuts. Make sure to keep an eye on the Syns though.
  4. Form into 15 cookies and place on your baking tray. Bake for around 15 minutes, or until the cookies are golden. Check on the cookies every 5 minutes or so.
  5. Allow to cool - and tuck in!

A delicately sweet, yummy and healthy low fat and sugar oat and cinnamon cookie. It's great for dunking and even better with a touch of choc shot!

Ingredients:
  • 40 g basic oats, blended in a food processor (*to be counted or used as your allowance)
  • 1 small egg
  • 2 tbsp sukrin gold sweetener
  • 1 tsp low fat margarine (*to be counted)
  • Pinch salt
  • 1/2 tsp baking power (*to be counted)
  • 1/2 tsp ground cinnamon
  • 1 tsp Sweet Freedom Choc (OPTIONAL) (*to be counted)

How to cook:
  1. Preheat your oven at 180c.
  2. Melt the margarine for 10 seconds in a microwave and mix everything in a bowl. (I used my mini food processor).
  3. Line a baking tray with baking paper and spoon 8 tsps of the mixture on top ensuring they're nicely spread apart and and flatten each with the back of a spoon.
  4. Bake in the oven for 12-15 minutes until slightly golden.
  5. Leave to cool for a couple of minutes and gently transfer them to a cooling rack and top with choc shot if using and enjoy!

  • 45g/1.6oz of brown sugar
  • 3 tbs of sukrin:1 (or another sweetener of choice)
  • 3 tbs of butter
  • 15g/0.5oz of raisins, sliced in half
  • 1 egg
  • ½ tsp of vanilla extract
  • ½ tsp of cinnamon
  • ½ tsp of baking soda
  • 2 tbs of water

How to cook:
  1. Preheat oven to 180c or 350f (gas mark 4)
  2. Place 1 cup of oats in a blender or food processor and pulse the blade a few times to finely chop up the oats.
  3. Add this to a bowl, with the other cup of oats, cinnamon, baking soda, and raisins.
  4. In another bowl mix together the butter, brown sugar and sukrin: 1 and then whisk in the egg, vanilla extract, and water.
  5. Add this to the oat mixture, and stir to thoroughly combine.
  6. Line a baking tray with parchment paper and add 15 equal sized balls of the mixture onto the tray, Flatten into a cookie shape.
  7. Place in the oven and bake for approx 20-25 mins till golden.
