Ingredients:
- 750g potatoes, peeled and cubed
- low calorie cooking spray
- 8 tomatoes, halved
- 2tsp dried oregano
- 400g of your favourite mushrooms, halved or sliced
- 2 x 415g cans baked beans in tomato sauce
- 4 large eggs
- 1tbsp finely chopped fresh parsley, to garnish
How to cook:
- Preheat the oven to 200C, gas 6. Cook the potatoes in a saucepan of lightly salted boiling water for 10 minutes, then drain and spread them out on a baking sheet lined with non-stick baking parchment. Spray with low calorie cooking spray, season and roast for 20-25 minutes until golden brown.
- Meanwhile, arrange the tomatoes cut-side up on a baking sheet lined with non-stick baking parchment, sprinkle over the dried oregano and season to taste. Spray with low calorie cooking spray and roast for 15-20 minutes on the shelf under the potatoes.
- While the potatoes and tomatoes are roasting, spray a wide non-stick frying pan with low calorie cooking spray and place over a high heat. Add the mushrooms and stir-fry for 5-6 minutes or until lightly browned. Add the beans, stir to mix well and cook for 5 minutes to heat the beans through.
- Poach the eggs in a saucepan of gently simmering water (4-5 minutes for soft, up to 8-10 minutes for firm).
- Divide the potatoes, tomatoes and the bean and mushroom mixture between plates. Top with the poached eggs, grind over a little black pepper and scatter over the parsley to serve.

Ingredients:
- 8 Eggs (beaten)
- 6 Bacon Medallions (cut into chunks)
- 1 Red Pepper (chopped small)
- 1 Large Leek (sliced)
- 6 Shallots (diced)
- Grated Low Fat Cheese (Optional as you Healthy Extra)
- Low Fat Cooking Spray
How to cook:
- Heat your oven to 180
- Using low fat cooking spray fry the onions, bacon, pepper and leeks in a pan until cooked and softened then divide by your ramekins
- Whisk up the eggs (and your cheese if your using it as your Healthy Extra) and divide by the ramekins, give them a stir so the ingredients won't all sit at the bottom
- Pop them on a baking tray and place in the centre of the oven for 20 mins (keep and eye on them as sometimes they can cook a little quicker) until they are golden and have puffed up a little
- Remove from the oven and enjoy

- Pre-heat
- If using the oven pre-heat to 190°C.
- Spray
- Lightly spray a 2 portion ovenproof serving dish or 2 individual ramekins with low calorie cooking spray.
- Heat a frying pan over a medium heat, spray with low calorie cooking spray, then add the bacon and mushrooms. Gently fry until they start to colour.
- Arrange the bacon and mushrooms evenly in serving dish.
- Spoon the beans over the bacon and mushrooms.
- Make a well with the spoon and crack the eggs on the top of ingredients.
- Sprinkle the egg with some salt and pepper & top with cheese.
- Bake
- Either bake in the preheated oven for 15 - 20 minutes or microwave on high for at least 60 - 90 seconds (cover with cling film if you cook in the microwave). Make sure the egg is cooked as you like it and serve.

- Now, spray a large frying pan with frylight and fry the bacon, onions and mushrooms until tender.
- Once the potatoes are part cooked, tip out the contents of the frying on top.
- Now spread over the beans, eggs then cheese and bake for 10 minutes.
- Once cooked, serve and enjoy!
