Super Simple Healthy Carrot Cake
A delicious and healthy carrot cake made using oats, low syn on Slimming World.

Ingredients:
  • 2x Carrots (peeled and grated)
  • 200g Oats (ensure they are gluten free if needed)
  • 1tsp Baking Soda
  • 2tsp Baking Powder
  • 2tsp Cinnamon
  • 2tsp Vanilla Extract
  • 5tbsp Granulated Sweetener (I use Sukrin:1)
  • 1x Vanilla Muller Light
  • 4x Eggs
  • 75g Philadelphia Light
  • 1/2 Pot Vanilla Muller Light
  • Food Processor
  • Loaf Tin
Nutrition:
  • Calories: 125 kcal
How to cook:
  1. To make the icing
  2. Preheat your oven to 180 degrees.
  3. Add the oats, sweetener baking soda and baking powder in to your food processor and pulse until the oats turn into a course flour.
  4. Add the cinnamon, vanilla extract and pulse until blended.
  5. Add the eggs and yogurt and blend until smooth.
  6. Add the grated carrot and pulse until the grated carrots are combined.
  7. Line your loaf tin with baking paper or grease it depending on the kind of loaf tin you have.
  8. Tip in the cake mixture and bake for 35-40 minutes or until the cake is cooked through.
  9. Allow to cool for ten minutes and tip onto a cooling rack to cool completely. Use this time to make the icing.
  10. When the cake has cooled tip the icing over the top and allow it to drip down the sides.
  11. Mix the cream cheese and yogurt together until smooth.
  12. Taste it to make sure it's sweet enough for your tastes and add more yogurt if necessary.

  • 1 large carrot (or 2 small, finely grated)

How to cook:
  1. To make the Cakes
  2. Pre-heat
  3. Preheat the oven to 180°C and line a muffin tray with 6 medium paper cupcake cases
  4. Pat the grated carrot dry on some kitchen roll
  5. Put all the ingredients together in a bowl and mix thoroughly
  6. Divide the mixture between the 6 cases then bake for 25 - 30 minutes
  7. Allow to cool and top with the frosting
  8. To make the frosting
  9. Mix all the ingredients together and spread over the top of the cooled cakes

  3. Next add your grated carrots, eggs, vanilla extract and fat free yoghurt to the mixture, and pulse for another 10-20 seconds.
  4. Line your loaf tin with baking paper, and pop in the cake mixture. Bake for 35-40 minutes at 180°C.
  5. Allow to cool for 10 minutes on a cooling rack. In the meantime, make the icing.
  6. Make the icing
  7. Mix the Philadelphia Light cream cheese and fat free vanilla yoghurt until you have a smooth mixture (about 20 seconds).
  8. When the cake has cooled, tip the icing over the top of the cake - and tuck in!

Ingredients:
  • 225g (8oz) self-raising flour
  • 2tsp baking powder
  • 1tsp ground mixed spice
  • 150g (5oz) soft light brown sugar
  • 100g (4oz) carrots, grated
  • 75g (3oz) walnuts, chopped
  • 2 ripe bananas, peeled and mashed
  • 2 medium eggs
  • 150ml (¼ pt) corn or sunflower oil
  • 300g tub Philadelphia soft cheese
  • 30ml (2tbsp) caster sugar
  • Finely grated rind of 1 orange
  • 15ml (1tbsp) fresh orange juice
  • Shredded orange rind, to decorate
How to cook:
  1. Preheat the oven to 180°C (350°F, gas mark 4). Lightly grease an 18 x 27cm (7 x 10½ in) tin and line with non-stick baking parchment.
  2. Sift together the flour, baking powder and mixed spice into a large bowl. Stir in the sugar, carrots, walnuts and banana. Add the eggs and oil, and beat until blended.
  3. Pour the mixture into the tin and bake for 40 mins until firm - a skewer inserted into the cake should come out clean. Turn out on to a cooling rack and remove the lining paper. Leave to cool completely.
  4. To make the icing place the cheese, sugar, orange rind and juice in a bowl and beat together until smooth. Spread over the cake and swirl with the back of a spoon. Decorate with orange rind and cut into squares.
