  • 4-5 lbs pork shoulder or leg joint
  • 20 cloves of garlic
  • 2 tsp sea salt
  • 1 tsp black peppercorns
  • 1 cup/250ml freshly squeezed orange juice
  • 1/2 cup/125ml freshly squeezed lemon juice
  • 2 medium onions
  • 1 tsp oregano
  • 1/2 cup/125ml olive oil
  • 1 tbsp olive oil
  • 6-8 slices(100g) bacon (chopped)
  • 1 green pepper (chopped)
  • 1 onion (chopped)
  • 4 cloves of garlic
  • 1 bay leaf
  • 1/4 tsp cumin
  • 1/2 tsp oregano
  • 1 tbsp red wine vinegar
  • 800g(28oz) canned black beans
  • salt to taste
  • 85ml/1/3 cup chicken stock

How to cook:
  1. For the Slow Cooker Cuban Pork
  2. In a food processor or a blender combine garlic, salt, smashed peppercorns, orange and lemon juice, onions and oregano. Process until smooth.
  3. Heat 1/2 cup of olive oil in a saucepan, the oil should be hot but not deep frying temperature hot.
  4. Take it off the heat and stir in the contents of the food processor and keep stirring to avoid burning.
  5. Pour the mixture of the pork and let it marinate overnight.
  6. In the morning put the pork together with the marinade in a slow cook and cook on low for 8 hours.
  7. At the end of cooking time pull pork with two forks and mix it well with the juices.
  8. For the Cuban Black Beans
  9. In a large pan cook chopped bacon with a tablespoon of olive oil. If your bacon is very fatty omit oil.
  10. Add chopped onion and green pepper and cook over low hear for 7-10 minutes until tender.
  11. Add garlic, bay leaf, cumin and oregano and stir fry for 1-2 minutes.
  12. Then add red wine vinegar, black beans, salt to taste and stock, bring to a boil, then reduce heat and cook on low for 15 minutes.
  13. Serve pork and beans with long grain rice.

This simple Slow Cooker Cuban Mojo Roast Pork comes together easily with a quick blended wet rub and your trusty Crockpot! Make it with pork shoulder or butt, or use a loin for a leaner alternative!

  • 5-6 lbs pork shoulder, pork butt or pork loin
  • the juice of 2 medium oranges
  • the juice of 3 limes
  • 1/2 tbsp coarse kosher salt
  • 1 tsp fresh ground black pepper
  • 1/2 tbsp garlic powder
  • 1/2 tbsp onion powder
  • 2 tbsp ground cumin
  • 1 tbsp dry oregano
  • the zest of one orange
  • the zest of one lime
  • 1 bunch fresh cilantro
  • 4 scallions
  • 1/2 cup olive oil
  • 1 tbsp minced garlic
How to cook:
  1. Add all rub ingredients to the bowl of a food processor. Blend until smooth, pressing down sides with a spatula as needed. 2. Add the citrus juice to slow cooker. 3. Rub the pork and place in the slow cooker, fat side up, with the citrus juice. 4. Cook on low for 8 hours. 5. Remove pork, to a cutting board, and shred with 2 forks. 6. Add pork back to crockpot, and toss to combine with juices.

  • 4 lbs boston butt
  • 2 medium onions
  • 1 tablespoon garlic (minced)
  • 1 tablespoon garlic powder
  • 1 (10 ounce) bottle marinade (Badia, Mojo)
  • 1/3 cup water
  • 4 cups cooked white rice

How to cook:
  1. Trim all external fat from pork roast.
  2. Slice onions to about 1/8 inch thick slices and place in bottom of crock pot.
  3. Rub pork roast with garlic powder on all sides and place on top of onions.
  4. Mix 5 ounces of marinade with 1/3 cup of water and pour around roast.
  5. Spread minced garlic evenly over top of roast.
  6. Cover and cook for 4 1/2 hours on high or 8 - 9 hours on low until meat has seperated from the bone.
  7. Remove pork from crock pot and shred with 2 forks.
  8. Remove onions with sloted spoon and place over shredded pork.
  9. Serve over white rice.
  10. Serve remainder of the bottle of marinade to drizzle over pork.

  • 1 3 to 4 lb pork butt (boneless)
  • 1 cup cilantro (stems removed)
  • 1/4 cup mint (stems removed)
  • 2 tbs oregano
  • 3 tsp cumin
  • 1 tsp pepper
  • 1 tsp kosher salt
  • 10 cloves garlic
  • 1 cup orange juice
  • 1/2 cup lime juice
  • 3/4 cup olive oil
  • 1 tbs cornstarch
  • 1 tbs water
How to cook:
  1. Rinse your pork butt and place on a large pan.
  2. In a for processor or blender place the cilantro, mint, oregano, cumin, peppeer, salt, garlic, orange juice and lime juice. Blend.
  3. Add olive oil and blend again.
  4. Cover the pork with the mojo sauce making sure to get into any crevices.
  5. Move pork into slow cooker and drizzle any leftover sauce over the pork.
  6. Slow cook for 5 to 6 hours on HIGH or 9 to 10 hours on LOW.
  7. Right before pork is done, preheat oven to 400º degrees.
  8. Once pork is done, carefully place the pork into a baking dish or pan. Do not include the juices.
  9. Place pork in the ovens middle rack and cook for 15 to 30 minutes or until desired golden color is achieved.
  10. While the pork is in the oven, place a colander over a saucepan and pour pork juices from the slow cooker. Place the saucepan on the stove over high heat.
  11. In a cup, mix 1 tbs cornstarch and 1 tbs water. Add to the saucepan and stir well. Depending on the amount of liquid you may have to add another cornstarch and water mixture. Once done, set aside and serve over pork or as a dipping sauce.
  12. Once pork is golden, remove from the oven and shred.
  13. And it's ready to serve!
