  • 1 ½ pounds chuck roast (cut into 1-inch cubes)
  • 2 cups mushrooms (sliced)
  • 1 small onion (diced)
  • 1 clove garlic (minced)
  • 1 cup bone broth
  • 1 tbsp raw apple cider vinegar
  • ½ tsp salt
  • ¼ tsp ground black pepper
  • 1 cup sour cream
  • 1 tsp xanthan gum (optional)

How to cook:
  1. Fill
  2. Arrange beef in the crockpot of the slow cooker. Cover with mushrooms, onion, and garlic.
  3. Season
  4. Pour bone broth and apple cider vinegar over the ingredients. Season with salt and pepper.
  5. Cook
  6. Cover with the lid and turn the slow cooker on. Cook on LOW for 6-8 hours or HIGH for 3-4 hours.
  7. Mix
  8. Add the sour cream and stir well to combine in the last 15-30 minutes of cooking time. If you desire a thicker sauce, sprinkle xanthan gum over the top of everything evenly and mix well.
  9. Serve
  10. Remove from heat and serve warm over cauliflower rice, miracle rice, or zoodles. See notes for details.

  • 1 kg Beef Chuck Steak (or Gravy Beef, or any other fatty cheap cuts of beef)
  • 1 brown onion (roughly chopped)
  • 1 carrot (roughly chopped)
  • 2 stalks celery (roughly chopped)
  • 2 teaspoons garlic paste
  • 2 teaspoons sweet paprika
  • 1/2 cup dry white wine
  • 1 cup beef stock/broth (See recipe)
  • 3 tablespoons tomato paste
  • 3 teaspoons dijon mustard
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 400 grams mushrooms (sliced)
  • 1/2 cup sour cream

How to cook:
  1. The morning prior to serving, chop all vegetables as above and cut the meat into 1 inch cubes.
  2. Combine all sauce ingredients together in a bowl.
  3. Add the onion, carrot and celery to the bottom of the slow cooker. Place the sliced mushrooms on top, followed by the beef.
  4. Pour the prepared sauce on top and cook on low for 8 hours.
  5. When ready to serve, gently stir through the sour cream and let sit for 5 minutes with the lid off the slow cooker.
  6. To keep this keto friendly, leave out the carrot and onion when serving.

  • 1 kg diced beef- recipe pictured used gravy beef. Pork (veal and chicken also suitable)
  • 2 large onions sliced finely
  • 700 gms sliced button mushrooms
  • 150 gms sour cream
  • 1/2 cup white wine
  • 1.5 tablespoons mild paprika
  • 5 teaspoons minced garlic
  • 2 teaspoons Dijon mustard
  • 1/2 teaspoon cracked black pepper
  • 1 teaspoon salt or to taste
  • Fresh chopped parsley to garnish

How to cook:
  1. Add the beef, mushrooms, onion, wine, paprika, garlic, Dijon mustard, pepper and salt into a slow cooker pot and mix to combine.
  2. Cook on High for 2 hours then Medium for 3 hours or leave on low for a minimum of 6 hours (or while you are at work) or until meat is tender. You may need to adjust times to suit your slow cooker.
  3. Add Chia Gel (see recipe below) during the last 30-60 minutes of cooking if needed-both a nutritional boost and thickener.
  4. Just prior to serving, mix through the sour cream.
  5. *Note if you use chicken reduce cooking time down by 1 hour.
  6. To Serve
  7. Serve with Cauliflower Mash
  8. Delicious served with hot buttered zucchini noodles. Top with Beef Stroganoff and garnish with fresh chopped parsley.
  9. To make Hot Buttered Zoodles- Simply toss zucchini ribbons/spiralised zucchini in butter in a heavy pan on the stove top for 2 minutes, season with salt and pepper and serve.
  10. Chia Gel
  11. Mix 1 tablespoon of finely ground chia seeds with 1/4 cup of water. Let sit for 10 minutes.
  12. Chia Gel Method
  13. Mix the gel to combine, stir well and leave to sit for 10 minutes before adding to your Stroganoff. I like to add it about 1 hour prior to eating. Stir it in so it is well combined. You cannot taste the chia seeds. Suitable to use as a thickener in soups, casseroles and stews.

How to cook:
  1. Place a large saucepan over high heat. Add the oil, onion, garlic and thyme.
  2. Saute until the onion is starting to turn translucent. Add the beef, salt and pepper and saute until browned.
  3. Add the tomato paste and cook out for 5 minutes.
  4. Add the red wine vinegar and stir well. Allow to cook for 5 minutes.
  5. Add the beef stock and bring to a simmer. Simmer uncovered for 1 hour.
  6. Add the mushrooms and continue to simmer for another hour.
  7. Remove from the heat and stir through the sour cream.
  8. Taste and add additional salt and pepper if desired.
  9. Serve immediately with a side of Buttery Cauliflower Mash.
