Ingredients:
  • 1 lb lean ground beef
  • 1 cup low carb marinara sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon chili powder
  • 1 teaspoon salt
  • 2 teaspoons cumin
  • 1 teaspoon paprika
  • 1 1/2 teaspoons cayenne powder (optional)
  • 1 cup bell peppers, diced
  • 3 cups cauliflower, chopped
  • 4 oz cream cheese, cut into pieces
  • 1 1/2 cups shredded cheddar cheese

How to cook:
  1. Mix together all of the spices in a little bowl and set aside.
  2. Add the ground beef to the slow cooker and mix in half of the spices.
  3. Mix the rest of the spices with the marinara sauce then mix it into the ground beef.
  4. Next add in the chopped cauliflower and peppers. Make sure the cauliflower is chopped into small pieces so it cooks well.
  5. Sprinkle cream cheese cubes over the veggies and...
  6. Sprinkle cream cheese cubes over the veggies and the cheddar cheese.
  7. Cover and cook for 3-4 hours on low until the meat is cooked through and the veggies are tender. Try to mix the casserole half way through if you can.
  8. When done, mix the casserole once again. Let it cool a bit before serving.

  • 1 can tomatoes with chilies
  • 4 cups shredded cabbage
  • 1 lb ground beef
  • 1 packet taco seasonings
  • 4 oz cream cheese
  • 1 cup shredded cheddar

How to cook:
  1. To make in the slow cooker.
  2. In a large saute pan brown the meat with half of the taco seasoning.
  3. Add cabbage, tomatoes, taco mix, beef mixture, cream cheese and cheese to the slow cooker.
  4. Cook on high for 3-4 hours and mix half way through. Or cook on low all day.Mix well before serving.
  5. To make in the Instant Pot.
  6. Add a tablespoon of oil to the pot and hit the saute button. Brown the meat and then mix in the spices, tomatoes and cabbage.
  7. Secure the lid and pressure cook using the manual button for 10 minutes. When done do a quick release and open the pot.
  8. Add the cheddar and cream cheeses and mix for a few minutes until they melt.

  • 1.5 - 2 lb ground turkey or beef
  • 2 tbsp taco seasoning
  • 1 cup salsa
  • 16 oz cottage cheese
  • 8 oz shredded cheddar cheese

How to cook:
  1. Preheat oven to 400.
  2. Mix the ground meat and taco seasoning in a large greased casserole dish. Mine is 11 x 13. Bake for 20 minutes.
  3. Meanwhile, mix together the cottage cheese, salsa, and 1 cup of the cheese. Set aside.
  4. Remove the casserole dish from the oven and carefully drain the cooking liquid from the meat. Break up the meat into small pieces. A potato masher works great for this. Spread the cottage cheese and salsa mixture on top of the meat. Sprinkle the remaining cheese on top.
  5. Return the casserole to the oven and bake for an additional 15-20 minutes until the meat is cooked thoroughly and the cheese is hot and bubbly.
