  • 1/2 tsp Ground Ginger
  • 1/4 tsp Red Pepper Flakes
  • 1/2 tsp Xanthan Gum (or arrowroot powder)
  • 2 Green Onions (chopped for garnish)
  • 1 tsp Sesame Seeds (for garnish)

How to cook:
  1. Slice the beef very thin against the grain.
  2. Place meat on the bottom of the crockpot.
  3. In a bowl, whisk together all ingredients except for sesame seeds and green onions. Pour over meat.
  4. Cook on low 5-7 hours on low.

Sweet and Spicy Slow Cooker Mongolian Beef is one of those simple set and forget type of dinners. This recipe is picky kid approved and you can serve it with stir fried veggies, zoodles or riced cauliflower.

Ingredients:
  • 1.5 lb London Broil (or Flank Steak)
  • 2 tbsp Unflavored gelatin powder
  • ½ cup Soy Sauce
  • ¼ cup water
  • 4 cloves Garlic (minced)
  • 1/4 cup Allulose
  • 1/2 tsp Maple Extract
  • 1/2 tsp Ground ginger (*You can use fresh pressed if you have it.)
  • 1/4 tsp Black pepper
  • ¼ tsp red pepper flakes (*optional)
  • 1 tbsp Sesame oil (* This is added after the heat is off to preserve flavor.)
  • 1 bunch Green Onion (*sliced and mixed in after the heat is turned off.)
  • 1 tbsp toasted sesame seeds (* gives the dish a beautiful finishing touch.)

How to cook:
  1. Slice the steak as thinly as you can, against the grain. It helps if the meat is partially frozen.
  2. Sprinkle
  3. Place the steak into the slow cooker and sprinkle gelatin over the meat.
  4. Mix
  5. In a small bowl, mix together the rest of the ingredients EXCEPT Sesame Oil. Pour the sauce over the steak in the slow cooker and stir to coat evenly.
  6. Cook
  7. Cover and cook for 4-6 hours on Low or 2-3 hours on High, until steak is tender and cooked through.
  8. Serve
  9. Turn off heat and mix in sesame oil. Remove the meat and serve with sauce drizzled over the top. If you want a thicker sauce, pour the sauce into a saucepan, and simmer for 10 minutes to reduce. Or, turn Crock Pot to high during the last 30 minutes while you are getting the rest of dinner ready.Drizzle the liquid over the meat and serve with your choice of accompaniments.

This easy slow cooker Mongolian beef is quick to throw into the crock pot, and is Whole30, Paleo, low carb and gluten-free. It only needs a handful of simple ingredients to make the sauce, along with flank steak, carrots, bell pepper and broccoli for the vegetables. Ingredients:
  • 1.5-2 lbs flank or skirt steak, thinly sliced against the grain
  • 1/4 cup arrowroot flour
  • 2 tbsp toasted sesame oil
  • 4 green onions, roughly chopped
  • 2/3 cup coconut aminos
  • 2/3 cup beef broth
  • 2 tbsp rice wine vinegar
  • 1 tbsp minced garlic
  • 2 tsp ground ginger
  • 1 tsp crushed red pepper flakes, or to taste
  • 1/2 cup shredded carrots
  • 1 green or red bell pepper, sliced
  • 1 head broccoli, cut into florets
  • Optional: 1 tbsp honey
  • 1.5 tbsp arrowroot flour mixed with 2 tbsp water to thicken
  • Sesame seeds and additional green onion to garnish if desired
How to cook:
  1. Add the sliced steak and 1/4 cup arrowroot flour into the slow cooker and use tongs to coat the beef with the flour (can use a baggie to shake to coat, too)
  2. Add the sesame oil, green onions, coconut aminos, broth, vinegar, garlic, ginger, red pepper flakes, carrots and honey (if using) to the slow cooker and stir in with the beef to combine
  3. Cover the slow cooker and cook on low for 5-6 hours or on high for 2-3 hours
  4. 30 minutes prior to the end of the cook time, stir in the bell pepper and broccoli. Cover and continue cooking until the beef is tender and the vegetables are tender but still slightly crisp
  5. To thicken the sauce, combine 1.5 tbsp arrowroot with 2 tbsp water in a small dish and stir with a fork to dissolve the flour. Pour into the slow cooker and stir well as the sauce thickens
  6. Garnish with sesame seeds and green onions or add more crushed red pepper flakes to increase spice level
