The pork chops are first covered in a delicious pork rub that gives them a nice crusty exterior, and the inside is so tender with a lovely smoke flavor. Ready? Let's fire up the smoker!

- 4 bone-in pork chops (or boneless pork chops)
- 2 tbsp olive oil
- 3 tbsp dry pork rub (link for homemade rub is down below in the notes)

- Preheat the smoker to 250 degrees F.
- Dry pork chops with a paper towel. Rub pork chops with olive oil.
- Apply spice rub liberally, covering the entire pork chop.
- Place pork chops directly on the grill grates.
- Close the lid and smoke for about one hour, or until the internal temperature reaches 145 degrees F in the thickest part of the meat.
- Remove the pork chops from the smoker and let rest for 5 minutes.

Ingredients:
- 4 thick cut bone in pork chops (at least 1 1/2 inches thick)
- 8 cups water (divided use)
- 1/4 cup kosher salt (do not use table salt)
- 3 tablespoons sugar
- 1/2 teaspoon ground allspice
- 2 teaspoons fennel seeds (lightly crushed)
- 2 teaspoons whole peppercorns
- 1 bay leaf
- 2 cloves garlic (crushed)
- 3 sprigs fresh thyme (or 1 teaspoon dried thyme)
- 1 tablespoon olive oil
- 3 tablespoons BBQ rub

- Pour 1 cup of boiling water into a large bowl that will fit all of the pork chops. Make sure the bowl will fit into your refrigerator.
- Add the salt and sugar to the water and stir until dissolved
- Add the allspice, fennel seeds, peppercorns, bay leaf, garlic and thyme to the bowl.
- Add 7 cups of very cold water to the bowl and stir to combine
- Place the pork chops in the bowl, making sure that they're completely submerged. You can add more water if needed.
- Cover the bowl and place it in the refrigerator for at least 6 hours, or up to 24 hours.
- Remove the pork chops from the brine and pat dry with paper towels
- Preheat an electric smoker to 250 degrees F. Load apple wood chips into the smoker.
- Preheat a grill, skillet or grill pan to medium high heat
- Drizzle the olive oil over the pork chops, then rub the BBQ spice onto both sides.
- Place the pork chops on the grill or grill pan and cook for 2-3 minutes per side or until just slightly charred.
- Place the pork in the smoker and cook for 45-60 minutes or until a thermometer inserted into the thickest part of the pork chop registers 145 degrees F.
- Let the pork chops rest for at least 5 minutes, then serve.

- 4 bone-in pork chops, approximately 1-1/2” thick
- 1 quart filtered water at room temperature
- 1/2 cup coarse sea salt
- 1/2 cup firmly packed brown sugar
- 2 tsps whole peppercorns
- 1 garlic clove smashed
- 1 bay leaf
- Apple juice and water
- Apple or hickory wood chips
- Herb pesto for serving (recipe follows)
How to cook:
- In a large baking dish or bowl, combine the water salt, sugar, peppercorns, garlic, and bay leaf. Stir well to dissolve the sugar. Place the pork chops in the brine, submerging them completely. Cover and refrigerate for 8 hours or overnight, but not more than24 hours.
- Remove the pork chops from the brine and rinse under cold water. Pat the chops dry with plenty of clean paper towels. Take a rack from the smoker and place the pork on the rack. Set this aside to come to room temperature while you prepare your smoker. Discard any excess brine.
- Prepare your smoker by filling the side tray with wood chips. Fill the water bowl 1/2 way with equal parts apple juice and water. Preheat the smoker to 250°F with the top vent open.
- Place the rack in the smoker. Smoke for 90 minutes and check the temperature with a reliable meat thermometer. You are looking for an internal temperature of 145°F. Continue smoking for approximately 30 minutes longer if the temperature is below that. Remember to check the wood chips and liquid supply every 45 minutes and replenish as necessary.
- Remove the pork chops to a cutting board and tent with foil. Allow them to rest for 10 minutes before serving to ensure they remain moist.
- Serve the pork chops with herb pesto sauce (recipe follows) or your favorite BBQ sauce.
