Serve a rougher blend of this smoked salmon pâté as a starter with salad and oatcakes or blend a bit longer for elegant canapés.

Ingredients:
  • 255g/9oz smoked salmon
  • 110g/4oz cream cheese
  • 2 tbsp double cream
  • ½ lemon, juice only
  • 2 tbsp chopped chives (plus some extra chives to sprinkle over the top)
  • pinch of sugar
  • salt and freshly ground pepper
How to cook:
  1. Pop all the ingredients into a blender and pulse until it has a consistency that you desire. Plenty of pepper is good but go easy on the salt, as the smoked salmon will be salty already. Occasionally I would substitute lime and coriander instead of lemon and chives.

Ingredients:
  • 100g/3½oz cream cheese
  • 100g/3½oz crème fraîche
  • 200g/7oz smoked salmon
  • 1 lemon, zest only, finely grated
  • ½ lemon, juice only
  • 1 tbsp creamed horseradish
  • 2 tbsp finely chopped, fresh dill
  • caper berries, to serve
How to cook:
  1. To begin, place all the ingredients except the capers in a food processor. Pulse until a pâté forms which still has some texture to it and is not a purée.
  2. Taste to check the seasoning as smoked salmon can vary greatly in its saltiness. It may also need more lemon juice.
  3. Serve with sliced bread, such as stout soda bread, and large caper berries.

  • 2 oz smoked salmon (60g (can use offcuts/pieces))

  • 1/4 tsp Dijon mustard
  • 1/8 tsp paprika

  • 150 g poached/steamed salmon fillets (cooled, flaked*)
  • 120 g smoked salmon (finely chopped)
  • 150 g cream cheese
  • 1-2 tbsp Plain Greek yogurt
  • Handful fresh dill (finely chopped)
  • Freshly cracked black pepper

  4. Spoon into serving bowl and chill for a couple of hours before serving.
  5. (You can eat the pate straight away but chilling it makes a firmer pate.)
