Ingredients:
- 4 bone-in, skin-on chicken thighs
- kosher salt and black pepper
- 1 tablespoon butter
- 1 tablespoon extra-virgin olive oil
- 1 small yellow onion (quartered and thinly sliced)
- 16 oz. sliced mushrooms (such as baby portobello/cremini)
- 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried)
- 2 tablespoons all-purpose flour
- 1 cup chicken broth
- 1/2 cup heavy cream

- Preheat your oven to 425 degrees F and line a baking sheet with foil.
- Heat the butter (1 tablespoon) with the olive oil (1 tablespoon) in a large skillet over medium-high heat. Season both sides of the chicken thighs with kosher salt and black pepper, liberally. Sear the chicken skin-side-down for 3-4 minutes, or until it's browned and releases easily from the pan. Remove the chicken to the prepared baking sheet (skin side up). Bake for about 30 minutes, or until internal temperature of the chicken is 165 degrees F.
- While the chicken is baking, make the mushroom sauce. Add the sliced onion and mushrooms (16 oz.) to skillet along with a pinch of salt and pepper and the fresh thyme (1 tablespoon), and sauté over medium-high heat, stirring only occasionally, until mushrooms are browned (5-10 minutes).
- Add the flour (2 tablespoons) to the mushroom and onion mixture and stir to coat, continuing to cook for another one minute.
- Gradually pour in the chicken broth (1 cup). Stir and continue to cook over medium heat, until sauce has thickened. Stir in the heavy cream (1/2 cup). Turn off heat and taste and adjust seasoning if necessary.
- When the chicken is done cooking, remove from oven and place in the skillet with the mushroom sauce, along with a spoonful or two of the juices from baking.
- Serve chicken with mushroom sauce on top.

- Preheat the oven to 350 degrees F (175 degrees C).
- Coat both sides of chicken breasts with oregano and cayenne pepper and place on a baking sheet. Season with salt and pepper.
- Bake in the preheated oven for 15 minutes.
- Melt butter in a nonstick skillet over medium heat. Add mushrooms, onion, Worcestershire sauce, and red wine. Cook and stir until vegetables shrink down a bit, about 5 minutes. Season with salt and cracked black pepper. Reduce heat to medium-low to low; cook until tender, 10 to 15 minutes.
- Pour mushroom mixture on top of the chicken. Continue baking until chicken is no longer pink in the center and the juices run clear, about 8 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
- Sprinkle mozzarella cheese on top of the chicken and cook until cheese is bubbly, about 5 minutes more.

- 6 Chicken Thighs skin on or off
- Drizzle Olive Oil
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- 1 tsp Chicken Seasoning or Seasoning Salt
- 1 tsp Paprika
- ½ tsp Black Pepper
- 1½ tsp Parsley
- 230 g/ 8oz Cremini Mushrooms sliced or whatever mushrooms you have on hand
- ¼ cup Chicken Broth
- 1 can Campbell's Cream of Mushroom Soup
- Parsley Flakes for garnish
How to cook:
- Pat dry your chicken, and season with garlic powder, onion powder, chicken seasoning or seasoning salt, paprika, black pepper, and parsley.
- Heat a drizzle of olive oil (enough to cover the bottom of skillet), and pan sear chicken until golden brown on both sides. The chicken will not be fully cooked through, however it will finish cooking in the oven.
- Once golden brown, add mushrooms and chicken broth to skillet - allow to cook for 1-2 minutes max.
- Pour Campbell's Cream of Mushroom on top of chicken and mushrooms. It will appear as though there's not enough sauce, but once heated, it will surely be enough! Stir in the sauce, you can turn/flip the chicken around so the sauce is evenly distributed.
- Cover with lid or aluminum foil, and place in oven at 380°F for 15-17 mins or until internal temp reached 165° Fahrenheit (75° Celsius).
- Remove from oven, garnish with parsley, serve and enjoy!

- 3 tbsp. salted butter
- 2 tbsp. olive oil
- 8 oz. fresh mushrooms, sliced
- 1 medium yellow onion, sliced
- 1 tbsp. minced garlic
- 4 boneless skinless chicken breasts
- 1/2 tsp. smoked paprika
- 1/2 tsp. garlic powder
- 1 tsp. Italian seasoning
- salt and pepper to taste
- 1/2 cup shredded mozzarella cheese
- 1/2 cup chicken stock
How to cook:
- Preheat oven to 375F and spray a 13 x 9 inch casserole pan with cooking spray.
- Heat 1 tbsp. butter and 1/2 tbsp. oil in a large skillet over medium high heat.
- Add mushrooms and onions and saute until tender, about 5 minutes.
- Add minced garlic and saute for another 30 seconds.
- Pour half of this mixture into the prepared casserole pan and set the other half aside.
- Season chicken with paprika, garlic powder, and Italian seasoning and heat the remaining butter and oil in the skillet.
- Add chicken to the skillet and cook 2 minutes on each side.
- Transfer chicken breasts to the casserole pan on top of the mushrooms and onions.
- Add chicken stock to the skillet and scrape the bottom of the pan to bring the browned bits of flavor out.
- Bring to a boil and let cook until chicken stock has reduced, about 5 minutes.
- Add the remaining mushroom/onion mixture on top of the chicken breasts, sprinkle with mozzarella cheese, and pour chicken stock sauce over the top.
- Bake for 15 minutes and serve.
