My grandmother was a wonderful cook. Even in her "town" house (as opposed to her farm house) she had two kitchens. One on the main floor for day to day cooking, and another in the basement for canning and preserving. After her death, my mother and I were cleaning out the cupboards in the basement kitchen. We found recipe box after recipe box. When my mom found this recipe, she almost did a cartwheel! I looked at the recipe and thought, "ok, this doesn't really sound all that good...." Mom told me, "wait til you try it!!" It's now one of my favorite desserts. The crust is dense and somewhat salty, which perfectly balances the creamy sweetness of the topping.

  • 3 egg whites
  • 1 cup sugar
  • 1/2 teaspoon baking powder
  • 14 saltines, rolled fine
  • 1/2 cup walnuts, chopped
  • 1 cup whipped cream
  • 1 (10 ounce) box frozen strawberries, thawed and strained

How to cook:
  1. Preheat oven to 325F and grease a 9" pie pan very well.
  2. Beat egg whites, slowly add sugar; beat until stiff.
  3. Add the rest of the ingredients.
  4. Pour into prepared pie plate.
  5. Bake for 40 minutes.
  6. When cool, top with mixture of whipped cream and strawberries.

Ingredients:
  • 3 egg whites
  • 1 cup sugar
  • 12 soda crackers crushed fine (saltine crackers)
  • 2 tsp. baking powder
  • 1 cup chopped pecans (or walnuts)
  • 1 tsp. vanilla
  • 1 cup whipping cream
  • 1/4 cup sugar
  • 1 teaspoon vanilla
  • Raspberries (about 1 to 1 1/2 cups, or more if you like)
How to cook:
  1. Spray a 8×8 square pan. Set aside.
  2. Beat egg whites until stiff.
  3. Add sugar and baking powder and continue beating until glossy and stiff. Fold in cracker crumbs, nuts and vanilla.
  4. Spread into prepared pan. Bake at 325 for 35 minutes. Cool completely.
  5. In a medium bowl mix whipping cream, sugar and vanilla. Mix on high speed until soft peaks form. Fold in raspberries and spread on top of crust and refrigerate at least 6 hours, or preferably overnight.

Ingredients:
  • 3 egg whites
  • 1 cup sugar
  • 1/2 teaspoon baking powder
  • 14 soda crackers (1/2 cup in crumbs)
  • 1/2 cup pecans (crushed *OPTIONAL)
  • 8 - 12 peaches (peeled and sliced)
  • 1 teaspoon corn starch
  • 2 tablespoons powdered sugar
  • 1 cup heavy cream
  • 1/2 teaspoon vanilla
  • 2 tablespoons powdered sugar
How to cook:
  1. For the Meringue Crust
  2. With a hand mixer (or a stand mixer) whisk the egg whites until frothy.
  3. Add in the baking powder and gradually add the sugar, continue whisking until the egg whites are stiff.
  4. In a ziplock bag roll the soda crackers until they are a fine crumb.
  5. Fold in the soda cracker crumbs into the whipped egg whites.
  6. Move mixture into a greased pie dish.
  7. Bake at 325 for 30 minutes.
  8. Remove from oven and let cool completely.
  9. For the Peaches
  10. Peel and slice the peaches. Move sliced peaches to a colander with a bowl under it to collect excess peach juices.
  11. In a small sauce pan set to medium temp, thicken the peach juices with cornstarch and cook until thickened.
  12. Toss the peaches with powdered sugar and the thickened peach juice to make a glaze.
  13. For the sweetened whipped cream
  14. Add the heavy cream into a chilled bowl and add the sugar and vanilla. Using an electric hand mixer or stand mixer with the whisk attachment, whip the cream to the desired consistency. For soft peaks, the cream will be just thick enough to hold its shape. Whip the cream a little longer for stiff peaks.
  15. When ready to serve top the pie crust with the fresh peaches and a dollop of whipped cream.
