  • 4 cups water or 4 cups stock
  • 2 1/2 cups long-grain rice
  • 1 teaspoon turmeric
  • 1 cinnamon stick
  • 1/2 teaspoon ground cinnamon
  • 1 -2 tablespoon sugar, white or brown
  • salt and pepper, to taste
  • 1/2 cup raisins (sultanas are best)
  • butter (optional)

How to cook:
  1. Add the water or stock to a large saucepan and bring to a boil over medium heat. Add the remaining ingredients and return to a boil. Reduce heat to low, cover tightly and simmer for 15 minutes.
  2. Remove from heat and set aside, covered, for another 5-10 minutes. Discard cinnamon stick, fluff with a fork and serve hot.
  3. Optional, Stir 1-2 tablespoons of butter into the cooked rice at the end.

“Geelrys,” literally translates to “yellow rice.” Imagine a pot of turmeric and raisin bejeweled rice… a simple side dish as flavorful as it is gorgeous.

Ingredients:
  • 2 cups basmati rice (, rinsed & drained)
  • 3 cups water
  • 1/4 cup raisins
  • 2 Tbsp vegetable oil
  • 1 Tbsp brown sugar
  • 2 tsp turmeric
  • salt
  • pepper
How to cook:
  1. Rinse and drain the basmati in cool water. Add it to a medium pot with all remaining ingredients and bring to a happy boil.
  2. Cover, then reduce the heat to very low and (barely) simmer for about 30 minutes. Enjoy those sweet bursts of raisin and the subtle, gorgeous glow of the golden turmeric.

  • 2-3 tablespoons cooking oil/butter
  • 1 medium onion chopped
  • 2 teaspoons minced garlic
  • 1 teaspoon minced ginger
  • 1 teaspoon smoked paprika

  • 2 cups white rice
  • 1- 1 1/2 teaspoon turmeric powder

How to cook:

  2. Heat a saucepan with oil/ butter.
  3. Add, ginger, turmeric, curry, and brown sauté for about a minute.
  4. Stir in rice to the pan, about 2 minutes.
  5. Add 4 cups of stock/water and raisins, bring to a boil.
  6. Reduce heat, and simmer. As the rice cooks you may add more stock if needed.
  7. Simmer until rice is completely cooked- about 18- 20 minutes depending on how much liquid you added
  8. Fluff and serve

  10. Heat a saucepan with oil, then add onions, garlic, ginger , paprika, curry pepper, cayenne pepper, and white pepper sauté for about a minute.
  11. Stir in rice to the pan, about 2 minutes.
  12. Add 4 cups of stock/water bring to a boil
  13. Reduce heat, and simmer. Add more stock if needed.
  14. simmer until rice is almost cooked- about 10-12 minutes into cooking.
  15. Throw in the peas, cover and continue cooking, for a few more minutes until rice is completely cooked.
  16. Fluff and serve.

  4. Slowly stir in chicken broth or water or combination of the two and raise heat to medium-high. Add salt and pepper to taste.
  5. Bring to a boil then turn the heat to low and cover the pan with a lid.
  6. Simmer for 20-25 minutes. Remove from heat and fluff with a fork.
