Ingredients:
  • 2 lb medium raw shrimp (peeled, deveined tails removed)
  • 2 1/2 cup self-rising flour
  • 1/2 cup plain yellow cornmeal
  • 3 1/2 tsp seafood seasoning (divided [i.e. Seafood Magic, Old Bay, Cajun-Creole])
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp ground cumin
  • 2 large eggs (beaten)
  • 1 1/2 cup whole buttermilk
  • 6-8 cups vegetable or peanut oil for frying

How to cook:
  1. Season the shrimp with 1/2 tsp seafood seasoning and set aside.
  2. In a medium mixing bowl, sift together the self-rising flour, cornmeal, 3 tsp seafood seasoning, garlic powder, onion powder, and ground cumin.
  3. In a separate bowl, whisk together 2 large eggs and 1 1/2 cups whole buttermilk.
  4. Toss the seasoned shrimp with 1/3 cup of the seasoned flour-cornmeal breading.
  5. Spread out into a single layer so they won't clump.
  6. Dip each piece in the buttermilk-egg wash.
  7. Toss in the seasoned flour-cornmeal breading shaking off any excess.
  8. Heat 4 inches of oil in a dutch oven or heavy bottomed saucepan to 350°F. Do not overfill the pot.
  9. Fry the shrimp in batches for 2-3 minutes [depending on the size of the shrimp] until golden and crispy. Adjust the heat periodically to maintain the temperature of the oil while frying.
  10. Use a slotted spoon to remove the crispy golden shrimp to a paper towel lined pan to drain.
  11. Repeat until all of the shrimp is fried. Sprinkle with additional seasoning after frying, if desired. Serve immediately with your favorite dipping sauce.

Southern-Fried Shrimp with Homemade Cocktail Sauce is about as delicious as they come. I love using large (or even extra large) shrimp here. The buttermilk and whole-grain batter make them extra crunchy and SO amazingly delicious!

  • 2 dozen shrimp (large, or extra-large, peeled and deveined)
  • ½ tsp Kosher salt (plus another 1 & 1/2 tbsp)
  • ½ tsp freshly ground black pepper (plus 1 tbsp )
  • 2 cups all-purpose flour
  • 2 tsp cayenne pepper
  • Oil (for frying) (I typically use vegetable, for frying)
  • 1 cup buttermilk (well-shaken)
  • 2 tsp whole-grain mustard
  • Homemade cocktail sauce

How to cook:
  1. Place the shrimp in a medium bowl and season with 1/2 teaspoon salt and 1/4 teaspoon black pepper.
  2. In a separate bowl, whisk together the flour with the remaining 1 & 1/2 tablespoons of salt, 1 tablespoon of pepper, and the cayenne.
  3. Heat the oil, in a heavy-duty skillet (about 3 - 4 inches deep, or your deep-fryer to 350F) - if you don't have a thermometer, test by tossing a pinch of flour onto the hot oil...if it sinks and doesn't sizzle, it's not ready. If it browns too quickly, it's too hot. You can also try a small piece of bread, using the same guide).
  4. Mix the buttermilk and mustard in a bowl, and then pour over the seasoned shrimp and combine.
  5. Working in batches, use a slotted spoon to remove the shrimp from the buttermilk and transfer to the seasoned flour.
  6. Using a separate dry spoon (or your fingers), toss to evenly coat.
  7. Carefully slip the battered shrimp into the hot oil and fry until golden brown and crisp, about 4 minutes; drain on paper towels.
  8. (Be sure not to overcrowd the fryer with too many shrimp, this lowers the temp of the oil, and the shrimp won't crisp up as nicely as they should).
  9. Serve with homemade cocktail sauce

  • 3 large cloves minced garlic (about 3 tablespoons)
  • 2 scallions, thinly sliced
  • 1 teaspoon dried red chili pepper flakes (optional)
  • 12 to 16 whole jumbo shell-on, head-on shrimp, about 1 pound
  • 1/2 egg, beaten
  • 1/4 cup cornstarch
  • Kosher salt and freshly ground black pepper
  • 1 teaspoon five spice powder, Old Bay, smoked paprika, Sichuan peppercorns, or a combination (optional, as desired)

How to cook:
  1. Heat 2 tablespoons of oil in a wok over medium heat until shimmering. Add the garlic, scallions and let brown, stirring occasionally, 3 to 5 minutes. Add the chile pepper flakes if using and stir until aromatic, about 30 seconds. Transfer oil and aromatics to a large metal bowl. Wipe wok clean with paper towel.
  2. Add remaining oil to wok and heat to 375°F (190°C) over medium heat. Meanwhile, combine egg and cornstarch in a medium bowl. Add shrimp and toss to coat. When the oil is ready, add half of the shrimp, dropping them into the oil one at a time. Cook, agitating and flipping shrimp frequently until crisp and just cooked through, 2 to 3 minutes total. Transfer shrimp to a paper towel-lined plate and repeat with remaining batch.
  3. Add drained fried shrimp to bowl with browned aromatics. Season to taste with salt, pepper, and optional additional seasonings. Serve immediately.
