  • 1-2 lbs. fresh okra
  • 1 cup corn meal
  • 1/4 cup flour
  • Salt and pepper
  • 1 cup buttermilk (optional)
  • 4 tablespoons butter
  • 1/2 cup canola oil

How to cook:
  1. Wash okra and pat dry, then slice into 1/2-inch pieces, discarding the tops.
  2. Mix together cornmeal, flour, salt, and pepper.
  3. Optional: Dip okra in buttermilk then place in strainer before dredging in cornmeal mixture. (This is if you want a thicker batter.)
  4. Dredge okra in cornmeal and shake off excess.
  5. Melt 1 tablespoon butter and about 4 tablespoons oil in skillet on medium-high. When the oil is hot, add some of the okra and cook on one side until nicely browned, then flip to the other side. Don't crowd the pan!
  6. Turn the heat down a little and continue cooking and stirring around a little until okra is nicely browned on all sides. Watch it because it will brown quickly!
  7. Repeat until all the okra is fried. Add oil and butter as needed.
  8. Remove from skillet with slotted spoon and place on paper towels to drain.

  • 12 oz fresh okra (cut into 1/2 inch pieces)
  • salt and pepper (to taste)
  • 2 large eggs
  • 1/3 cup all purpose flour
  • 2/3 cup cornmeal
  • 1/2 cup seasoned breadcrumbs
  • 1/4 tsp paprika
  • 1/4 tsp cayenne
  • oil for frying
How to cook:
  1. Season okra with salt and pepper.
  2. Add eggs to a separate small bowl.
  3. Combine flour, cornmeal, seasoned bread crumbs, paprika and cayenne into another small bowl and whisk together.
  4. Begin by dipping okra into cornmeal and flour coating.

  6. Repeat dredging process until all okra is ready.
  7. Heat oil in a frying pan over medium high heat.

  • 20 fresh okra stalks (cut into 1/4" pieces)
  • 2 eggs
  • 1 cup corn meal
  • 1 teaspoon salt

How to cook:
  1. Cut Okra stalks down to 1/4th inch pieces. Discard ends.
  2. Beat 2 eggs in a bowl and place cut pieces of okra directly into egg mixture. Mix well to evenly coat all pieces.
  3. Let okra set for about 5 minutes while oil is heating up.
  4. Heat at least 2-3" of oil in a saucepan until 375 degrees.
  5. In a separate bowl, add corn meal, salt and pepper seasoning and mix well to combine.
  6. Divide the okra (from the egg mixture) into fourths.
  7. Add one fourth of the okra to the corn meal mixture and mix well to evenly coat all sides.
  8. Place cornmeal covered okra into hot oil and fry until browned on both sides, about 3-5 minutes.
  9. Carefully remove, drain on paper towels and repeat, frying okra in batches and draining. Sprinkle with additional kosher salt as pieces come out of hot oil.
  10. Serve fried okra immediately while still warm.

  1. Wash and dry the okra pods. Remove the top and tail from each pod and slice crosswise into approximately 1/2 inch pieces.
  2. Place in a large bowl and lightly sprinkle with salt and pepper. Add cornmeal to bowl with the sliced okra. Using your hands, toss the okra in the cornmeal until each piece is well coated.
  3. Pour oil to a depth of about 3/4” in a heavy cast iron frying pan. Heat the oil and test for readiness by dropping a piece of the prepared okra into the pan. If the okra immediately begins to bubble the oil is ready for cooking.
  4. Cook the okra in two to three batches until golden brown and crisp on the outside. Do not crowd the pan.
  5. Remove to a paper towel lined plate or a wire rack to drain. Sprinkle very lightly with additional salt if desired.
