  • 2½ tablespoons kosher salt (divided)
  • 6 chicken thighs (bone-in, skin-on)
  • 2 tablespoon unsalted butter
  • ½ cup all-purpose flour
  • 1 teaspoon ground black pepper

How to cook:
  1. First, mix two cups of water and two tablespoons of kosher salt in a large bowl to brine the chicken. Next, add the thighs and make sure they are completely submerged. Cover, and refrigerate for at least four hours, up to 24 hours.
  2. When you are ready to bake the thighs, preheat your oven to 400 degrees F.
  3. Remove the poultry from the refrigerator, drain, and pat dry with paper towels.
  4. Place the butter in a 9x13 metal roasting pan.
  5. Place the pan in the oven to allow it to heat up and the butter to melt. Watch it carefully, and don't let the butter burn; you want the thighs to start cooking as soon as they hit the pan.
  6. While the pan is heating, place the flour, remaining salt, and pepper in a large plastic storage bag. Add the thighs, a piece at a time, and shake well until it's thoroughly coated. Shake off any excess flour and repeat with the rest of the chicken.
  7. Remove the pan from the oven and place the thighsn in it, skin side down.
  8. Oven-fry the chicken for 30-40 minutes, or until the bottom is golden brown and crispy.
  9. Remove from the oven and use a spatula and turn the chicken over. Cook for an additional 20 minutes.
  10. Remove the chicken from the oven, and drain on paper towels.
  11. If desired, season with additional salt and pepper and serve immediately.

  • 1/8 cup Tabasco sauce
  • 1 teaspoon Cajun seasoning

How to cook:
  1. Wash whole chicken thoroughly (very important since chicken may have undesired residue still on the skin and inside)
  2. At this time you will want to use a sharp butcher’s knife and cut the chicken into desired pieces. 2 Breasts, 2 wings, 2 legs, and lastly 2 thighs.
  3. Once you have cut your chicken up into pieces you will need a large plastic container or glass container with tight-fitting lid. Place all ingredients listed above in container, using a small whisk mix all ingredients thoroughly. Place Chicken in the mixture turns into the mixture a few times to coat.
  4. Place in your refrigerator, for up to 12 hours. — You will want to turn chicken in the mixture a few times. When the desired time has elapsed for marinating your chicken, drain chicken of excess marinade. Set drained meat to the side. You may use a colander to drain the chicken in the sink to make things easier
  5. Preheat the oven to 425 degrees F
  6. In medium size glass bowl or container of choice, crack 3 eggs, add the Tabasco sauce, whisk to combine all the ingredients. In a clean dry plastic container with a tight-fitting lid or large Ziploc bag if desired (gallon size preferably) place 2-3 cups flour, baking powder, Cajun seasoning, and black pepper. Place a tight-fitting lid on a container or seal Ziploc bag. Shake vigorously to combine all ingredients. Set to the side.
  7. Once you have completed all 8 pieces of chicken, place each piece of chicken in the egg mixture (be sure to coat the entire piece of chicken in the egg) as you complete each piece place one at a time in flour mixture container and shake to coat thoroughly. Place the chicken on baking racks you have placed on the cookie sheet at this time. You will continue this process until each piece has been done and placed on the baking rack on the cookie sheet.
  8. Place in preheated oven to 425 degrees and bake 45 -50 minutes. (You may want to turn chicken 25 minutes into baking for the BEST results)

  • 1 and 1/2 cups flour
  • 1 tablespoon Gefen Garlic Powder
  • 1 tablespoon Haddar Kosher Salt
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • 1 teaspoon Gefen Paprika
  • 1 teaspoon black pepper
  • 1/4 – 1/2 teaspoon turmeric

How to cook:
  1. Coat a baking sheet with cooking spray.

  • 2 lbs chicken (cut up)
  • 1/2 teaspoon paprika
  • 2 teaspoon seasoning salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon poultry seasoning
  • 1/2 teaspoon white or black pepper
  • 1/2 teaspoon Cajun seasoning
  • 1 egg
  • 1/2 cup milk
  • 2-3 dashes hot sauce (optional)
  • 1 cup all-purpose flour
  • 2-3 Tablespoons butter (melted)
  • 2 Tablespoons olive oil
How to cook:
  1. Preheat oven to 400
  2. Wash and dry the chicken.
  3. Sprinkle the chicken with paprika
  4. Combine the remaining spices in a small bowl.
  5. Sprinkle half of the spice mixture over the chicken and reserve the other half for the flour.
  6. Use your hands to distribute the seasonings all over the chicken
  7. Add flour to a separate bowl.
  8. Pour in the other half of the seasoning mixture. Whisk to combine. Set aside.
  9. In a small bowl add in the egg, milk and a few dashes of hot sauce. Whisk to combine.
  10. Set a plate aside to place the chicken on once you’re done dipping them.
  11. First dip the chicken into the egg mixture with one hand. Let excess drip off.
  12. With the other hand place the chicken in the flour and coat. Using different hands keeps the flour from becoming clumpy.
  13. Shake off the excess flour and place the chicken on the plate.
  14. Let chicken sit for 5 minutes. Recoat in flour if desired.
  15. Generously grease a grill pan rack with vegetable oil.
  16. Place the chicken on the grill rack.
  17. Mix butter and olive oil and drizzle over chicken.
  18. Bake for 40 minutes. Broil for the last 3-4 minutes to crisp up the skin more if desired.
  19. Let chicken rest before serving.
