This asparagus carbonara pasta recipe from Slimming World is not only good for you and ready in less than half an hour, but it's delicious too! Slimming friendly, great for calorie counting and diet plans like Weight Watchers.

Ingredients:
  • 8 Rashers of Bacon (lean)
  • 1 Onion
  • 1 Clove Garlic
  • Handful Chopped Parsley (plus extra for garnish)
  • 4 Eggs
  • 4tbsp Fat Free Fromage Frais
  • 30g of Parmesan
  • Tagliatelle/Spaghetti (enough for two/three people depending on your serving size)
  • Fry Light
  • Salt & Pepper (to taste)

How to cook:
  1. Cook pasta as per pack instructions.
  2. Meanwhile, finely chop the onion and garlic and add to a pan over a medium heat with Fry Light.
  3. Chop the bacon and add in with the onions. Fry until it begins to go crispy.
  4. Meanwhile, mix the eggs, fromage frais, parsley, 20g of parmesan, and salt & pepper together in a separate bowl.
  5. When the pasta is cooked, turn all of the hobs off.
  6. Drain the water out of the pasta and tip it into the pan with the bacon and onion (keeping it on the hob over the residual heat), mix it thoroughly.
  7. Still over the remaining heat, tip in the egg mixture and toss it with the pasta and bacon. The heat will thicken the sauce, and cook the egg, without turning into scrambled egg!
  8. When your sauce has thickened, remove from the heat and serve with a garnish of parsley and the rest of your parmesan.

  • 120 g dried spaghetti
  • 200 g gammon (cut into little pieces)
  • 30 g Pecorino cheese
  • 1 pack button mushrooms (sliced thinly)
  • 1 egg
  • 2 tbsp quark
  • 1/2 brown onion (finely chopped)
  • 300 ml vegetable stock (made with 1 vegetable stock cube)
  • 1 tsp freshly ground black pepper (to taste)
  • handful fresh parsley (chopped)
  • 1/4 tsp mustard powder
  • low calorie cooking spray

How to cook:
  1. Boil the kettle - whilst you're waiting for it to boil chop the onion, mushrooms and gammon.
  2. Cook the pasta as per instructions on the pack, and heat a large frying pan with a few sprays of low calorie cooking spray. Fry the onions until softened, add the mushrooms & gammon and cook till browned slightly.
  3. Add the vegetable stock to the frying pan, and cook on high stirring frequently until it reduces by half.

  5. Meanwhile in a bowl whisk the eggs, black pepper, quark and mustard (if you're using it!) - set aside.
  6. Drain your pasta once it's cooked and tip into a big bowl, add the cooked onions, mushrooms, remaining stock and gammon - stir well. Slowly add the whisked eggs, Pecorino cheese and Quark making sure to stir constantly. Do NOT do this on the heat otherwise you'll end up with scrambled egg!

  • 100g fat free natural fromage frais
  • 500g linguine or tagliatelle
  • 400g asparagus tips, trimmed and halved
  • 6 tbsp very finely chopped fresh flat-leaf parsley, plus extra for garnish
  • 2 eggs
  • 1 garlic clove, peeled and crushed
  • Salt and freshly ground black pepper
  • Low calorie cooking spray
How to cook:
  1. Cook the pasta according to the packet instructions and then drain and keep warm.
  2. While the pasta is cooking, blanch the asparagus tips in a pan of lightly salted boiling water for 3-4 minutes or until just tender. Once they are tender, drain the water and set aside.
  3. In a mixing bowl, lightly beat the eggs and add the garlic and fromage frais. Whisk the mixture until it’s well combined and then stir in the chopped parsley. Season well with some salt and pepper.
  4. Spray a large frying pan with low calorie cooking spray and place over a medium-low heat. Then add asparagus and pasta cook for 2-3 minutes until hot.
  5. Pour over the sauce and gently heat through for 2-3 minutes until the pasta is well coated.
  6. Remove from the heat and serve garnished with chopped parsley.

  • 4 medium chicken breasts, thinly sliced into strips
  • 1 x 180g pack light cream cheese
  • 1 red pepper, finely diced
  • 1 yellow pepper, finely diced
  • 1 red onion,finely diced
  • 1 red chilli, finely diced (lave out if you don't want spice!)
  • 4 tbsp tomato puree or passata
  • 1 clove garlic
  • 4 tbsp Cajun Spice mix (plus 1 for the sauce)
  • 50ml Chicken stock
  • 300g dried pasta

How to cook:
  1. In a freezer bag or plastic bag add the chicken breast pieces with the Cajun spice mix. Seal the bag and move the chicken around inside of the bag, to coat all over with the flavouring.
  2. Leave in the fridge for at least 20 mins, but preferably.
  3. After the chicken as marinated, heat a frying pan over a medium heat and spray with frylight. Add the chicken breasts and fry off.
  4. Add the red & yellow peppers, onion, garlic and chilli. Fry of for 2-3 minutes.
  5. Add the tomato puree, chicken stock and cream cheese to the frying pan with the chicken and veg mix. Stir until a sauce is formed. Add another teaspoon of Cajun seasoning.
  6. Add some of the pasta water to reduce the thickness if required.
