  • 1 pound box spaghetti noodles
  • 1 green pepper, (diced)
  • 1 red pepper, (diced)
  • 1/2 red onion, (thinly sliced)
  • 1 English cucumber, (sliced)
  • 1 cup grape tomatoes, (sliced in half)
  • 2.25 ounce) can sliced olives, (drained)
  • 1/2 cup cheddar cheese, (cut into cubes)
  • 1/4 cup grated Parmesan cheese
  • 1 Tablespoon McCormick Salad Supreme seasoning
  • 1 teaspoon garlic powder
  • 16 ounce bottle Italian dressing

How to cook:
  1. Cook spaghetti according to package directions.I season the boiling water with one tablespoon of kosher salt before putting the noodles in. Stir noodles often while cooking. Drain well after cooking until al dente.
  2. In a large bowl - and I do mean LARGE bowl - add in all your diced veggies, olives and cheeses.
  3. Then add the cooked and cooled spaghetti on top. Season salad with McCormick Salad Supreme seasoning and garlic powder. Give it all a gentle toss.
  4. Pour Italian dressing over noodles.
  5. Stir mixture carefully until combined.
  6. Cover with plastic wrap and allow to cool for at least two hours before serving.

  • 1 pound spaghetti
  • 2 cups grape tomatoes - halved
  • 2 cups cucumbers - sliced and halved
  • 1 cup pepperoni slices - halved
  • 3/4 cup red onion - minced
  • 3/4 cup Parmesan cheese - grated
  • 2 tablespoons fresh parsley - chopped
  • Italian Vinaigrette Dressing - about 1 1/4 cup
  • 3/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 1/4 cup fresh lemon juice
  • 1 teaspoon garlic - minced
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon pepper
  • 1 teaspoon salt
How to cook:
  1. Cook spaghetti pasta according to package directions. Drain and rinse.
  2. To a large bowl add spaghetti, tomatoes, cucumbers, onion, and pepperoni. Drizzle over dressing and toss all ingredients together. Sprinkle on Parmesan cheese and parsley.
  3. Serve immediately. **Can be made a day ahead of serving. Store in an airtight container in fridge for up to 3 days.
  4. Italian Vinaigrette Dressing
  5. Add olive oil, vinegar, lemon juice, garlic, oregano, basil, pepper and salt to a small bowl or jar. Mix together or shake to incorporate all ingredients.

  • 1 pint cherry tomatoes
  • 1 medium cucumber
  • 1/2 medium green bell pepper
  • 1/2 medium red bell pepper
  • 1/2 small red onion
  • 1 (2.25-ounce) can sliced black olives
  • 1 1/4 cups Italian vinaigrette salad dressing, such as Ken’s or Newman’s Own
  • 1 1/2 ounces Parmesan cheese
  • 1 small bunch fresh parsley
  • Kosher salt
  • Freshly ground black pepper

How to cook:
  1. Step 1
  2. Bring a large pot of salted water to a boil. Add 1 pound dried spaghetti and cook according to package directions.
  3. Step 2

Meanwhile, prepare the following, adding each to the same large bowl as you complete it: Halve 1 pint cherry tomatoes; halve 1 medium cucumber lengthwise, scrape out the seeds, and dice (about 1 heaped cup); dice 1 medium green bell pepper and 1 medium red bell pepper (about 1 cup each); dice 1/2 small red onion (about 1/3 cup); drain 1 (2.25-ounce) can sliced black olives.
  5. Step 3
  6. When the pasta is ready, drain and add to the bowl. Drizzle with 1 1/4 cups Italian vinaigrette and toss to combine. Cover and refrigerate for at least 2 hours.
  7. Step 4
  8. When ready to serve, toss the spaghetti again. Taste and season with kosher salt and black pepper as needed. Finely shred 1 1/2 ounces Parmesan cheese on the smaller holes of a box grater (about 1/2 cup). Pick and coarsely chop the leaves from 1 small bunch fresh parsley until you have 1/4 cup. How to cook:
  1. Cook spaghetti to al dente according to package directions. Drain, rinse under cold water and set aside. *Note, normally we say don't rinse, but for pasta salad it's necessary to stop the cooking process and cool the pasta.
  2. Add cucumbers, tomatoes, olives, parsley and onions to a bowl. Season with salt and pepper, then toss with spaghetti.
  3. Pour 1 cup of Italian dressing over the pasta and vegetables. Toss to combine, taste, and add more dressing as desired.
  4. Refrigerate, covered for at least four hours. Serve cold, topped with freshly grated Parmesan cheese and minced parsley.
