Classic crisp biscuits in the shape of cute Easter bunnies, spring chicks and dainty Easter eggs. These Easter biscuits are a joy to bake and would make great little gifts.

Easter Biscuits

A classic old English recipe which takes it name from when they were traditionally baked. Delicious to enjoy at any time of the year.

Ingredients:
  • 75 g (3oz) butter
  • 75 g (3oz) golden caster sugar
  • 1 egg (separated)
  • ¼ tsp ground cinnamon
  • 50 g (2oz) currants
  • 15 g (½oz) mixed peel
  • 175 g (6oz) plain flour ((all purpose))
  • 3 tbsp milk
  • golden granulated sugar to sprinkle
How to cook:
  1. Preheat the oven to 180℃ (160℃ fan)/350°F/gas mark 4.
  2. Beat 75g (3oz) softened butter with 75g (3oz) caster sugar together until light and fluffy, then beat in 1 egg yolk.
  3. Add ¼tsp cinnamon, 50g (2oz) currants and 15g (½oz) mixed peel and mix to combine, then beat in 3tbsp milk.
  4. Add 175g (6oz) plain flour and mix to a stiff dough. Roll out the dough to 6mm (¼in) thick then use a 7cm (3in) round cookie cutter cut out biscuits and transfer to a baking sheet. Gather up the trimmings, roll and repeat.
  5. Lightly beat the egg white and brush the surface of the biscuits with the egg white, then sprinkle with a little granulated sugar.
  6. Bake for 15 – 18 minutes until pale golden.

  • 60g butter
  • 45g icing sugar
  • 2.50 gm ground cinnamon
  • 1/2 tsp ground cardamom
  • 0.63 gm ground ginger
  • 1 egg yolk
  • 75g plain flour
  • 75g self-raising flour
  • Caster sugar, to dust

How to cook:
  1. Preheat oven to 180°C. Line an oven tray with baking paper.
  2. Use an electric mixer to beat the butter, icing sugar, cinnamon, cardamom and ginger in a bowl until pale and creamy. Add the egg yolk and beat until just combined. Add the combined flours and stir with a wooden spoon until mixture just comes together. Turn onto a lightly floured surface and gently knead until smooth.
  3. Roll dough out on a lightly floured surface to a 2mm-thick disc. Use a 4cm heart-shaped pastry cutter to cut out discs and place on the lined tray. Use the end of a straw to cut out a small hole at the top of each biscuit. Re-roll dough scraps to make more biscuits. Sprinkle evenly with caster sugar. Bake for 10 minutes or until lightly golden. Remove from oven and set aside on the tray to cool completely. Thread ribbon through hole at the top of each biscuit. Store in an airtight container.

  • 200g (1 + 2/3 cups) plain (all-purpose) flour
  • 1/4 teaspoon salt
  • 1 teaspoon of mixed spice
  • 75g (1/4 cup + 2 tablespoons) sugar (plus a little extra for sprinkling)
  • 100g (7 tablespoons) butter
  • 1 egg (separated)
  • 50g (1/4 cup) currants
  • 2 tablespoons of warm milk

How to cook:
  1. ~ Pre-heat oven to 180°C (350°F). Prepare a baking tray (either by greasing or using grease-proof paper).
  2. ~ In a large bowl, sift the flour, salt and mixed spice.
  3. ~ In a separate bowl, cream the butter and sugar until soft and creamy, then beat in the egg yolk.
  4. ~ Fold in the flour mixture, along with the currants.
  5. ~ Gently warm the milk for a few seconds in the microwave and add to the mixture. Stir until just combined.
  6. ~ On a floured surface, knead the dough and then roll out until thin.
  7. ~ Using a cookie cutter, gently cut out the cookies. Roll the remaining dough again, and continue to cut out cookies until all the dough has been used.
  8. ~ Place on a baking tray in the middle of the oven and bake for around 8 minutes.
  9. ~ Remove from the oven and brush the tops of the biscuits with the egg white (make sure you get it all over the cookie, or the colouring will be uneven when baked) and sprinkle with sugar.
  10. ~ Return to the oven for another 3-6 minutes until golden brown.
  11. ~ Allow to cool on a wire rack. Enjoy!
