Sweet and Spicy Plum Sauce Canning Recipe
This plum sauce recipe is the perfect sweet and spicy recipe to can up for all year eating. Easy step by step tutorial, easy, even if you're new to canning.

Ingredients:
  • 2 cups lightly packed brown sugar
  • 1 cup organic evaporated cane juice
  • 1 cup apple cider vinegar
  • 3/4 cup finely chopped onion (I used walla walla sweet)
  • 2 Tablespoons finely chopped jalapeno peppers (I left the seeds in for some heat)
  • 2 Tablespoons mustard seeds
  • 1 Tablespoon canning salt
  • 2 cloves finely chopped garlic
  • 1 Tablespoons finely chopped gingerroot
  • 10 cups finely chopped pitted plums
How to cook:
  1. After you've got your plums prepped, diced (whirled in the food processor which makes it kind of runny) and measured, dump the rest of the ingredients in a heavy bottom stock pot. Using a thick bottomed (yes, that phrase made me giggle, too) keeps your sauce from scorching. Put all the rest of the ingredients, minus the plums, in and bring to a boil. Stir often, sugar scorches easily.
  2. Add your plums and return to a simmer. Let simmer for 1 hour and about 40 minutes, stirring every now and then, until sauce has reduced and thickened up some. You can see the line in the above photo of when I started the plum sauce and when it was done reducing at the end of the time.
  3. Ladle your sauce into clean Mason jars to a 1/2 inch headspace. Process in a hot water bath for 20 minutes.

  • 4 pounds plums (washed, cut in half and pitted (or amount needed to equal 8 cups of food-processed chopped plums))
  • 3/4 cup chopped onion (about 1 medium)
  • 1½ cups brown sugar
  • 1 cup white sugar
  • 1 tablespoon dry mustard
  • 2 tablespoons dry (ground ginger)
  • 1 tablespoon salt
  • 2 cloves garlic (minced, about 2 teaspoons)
  • 2 teaspoons red pepper flakes (or to taste)
  • 1 teaspoon ground cinnamon
  • 1 cup cider vinegar

How to cook:
  1. Chop plums in a food processor and transfer to a large heavy-bottomed pot (it should equal 8 cups chopped plums). Chop onions in processor and add them to the plums.
  2. Combine the remaining ingredients with plums and onions, bring to a boil and then reduce heat. Cook until thickened, about an hour.
  3. For a smooth sauce, puree with an immersion blender right in the pot (optional if you'd like a chunkier sauce, though it helps speed the cooking time) and continue cooking for another hour, or until the sauce reaches the desired thickness.
  4. Ladle sauce into hot jars, leaving 1/4-inch headspace. Attach lids and rings. Process 20 minutes in a boiling-water canner. Turn off heat, remove lid and let jars sit in canner to cool for 5 minutes. Remove to a cloth to cool completely.
  5. Test lids, label jars, store and use within a year to 18 months.

How to cook:
  1. Preheat oven 375 deg.
  2. Combine first four ingredients in plastic bag. Add chicken strips and marinate for 15 minutes.
  3. Place almonds and parsley on waxed paper. Dip chicken strips into mixture to coat. Place chicken strips on a sprayed jelly roll pan and bake at 375 deg. for 16-20 minutes.

  • 2 cans (30 ounces each) purple plums, drained and pitted
  • 1/4 cup sugar
  • 3 tablespoons orange juice concentrate
  • 4-1/2 teaspoons lemon juice
  • 1-1/2 teaspoons cider vinegar
  • 1/2 to 3/4 teaspoon salt
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon cayenne pepper
