  • green tomatoes - 22 lb (10 kg)
  • vinegar - 8 1/3 cups (2 l)
  • water - 1.5 gal (6 l)
  • sugar - 3 1/5 cups (750 g)
  • salt - 2 cups (500 g)
  • cloves - 10 grains
  • allspice - 10 grains
  • pepper - 10 grains
  • bay leaf - 5 leaves
How to cook:
  1. Green tomatoes are cleaned from the stems and washed well. Place in jars and put dill between them. Press down on the tomatoes with grids of small sticks.
  2. In advance, prepare a marinade in the following ratio: 1.5 gal (6 l) vinegar , 8 1/3 cups (2 liters) of water, 3 1/5 cups (750 g) sugar, 2 cups (500 g) salt and spices , 10 grains from each. Leave it to cool.
  3. Pour the marinade over the green tomatoes in the jars. Close and keep in a cold place.

  • green tomatoes - 4.5 lb (2 kg)
  • cauliflowers - 1 head
  • carrots - 17.5 oz (500 g)
  • banana peppers - 10.5 oz (300 g)
  • black pepper - grains
  • allspice - grains
  • marinade - 1 packet, for canning
  • water - 7 1/5 cups (1750 ml)
  • wine vinegar - 1 1/5 cups (300 ml)
  • sugar - 2/3 cup (150 g)
How to cook:
  1. Clean, wash and chop the vegetables coarsely, tear the cauliflower into rosettes, leave the peppers whole. The ingredients listed are enough for 7 jars of about 3 1/3 cups (800 ml) each.
  2. If possible, choose firm green tomatoes without any damage on the skin. The jars need to be clean and dry. Distribute the vegetables into the jars, put tomatoes, carrots, cauliflower rosettes, 1-2 peppers and several grains black pepper and allspice in each.
  3. Make the marinade as described on the packet. Pour the water, vinegar and sugar in a pot. Add the packet contents and stir. Boil 3-5 min., while stirring nonstop, so that the contents dissolve.
  4. Remove from the stove and while still warm, distribute the marinade into the jars. Close them immediately with their caps and turn upside down. This pickle doesnt require sterilization. Store in a cool and dark area - it will be ready for consumption after about 2 weeks.

How to cook:
  1. Summer time was never a time of ease and leisure. The produce was ripening in the garden and that meant more canning to do. Relishes were always a welcome addition to the table during the winter. My parents never bought comercially prepared pickles, peppers, relishes. We alway made our own. The Green Tomato Relish would rid the garden of all the tomatoes that never wanted to ripen. It is a wonderful, tasty, spicy relish that will accent any meal. Great with sandwiches. Regards, June Meyer. Slice thinly only the tomatoes, onions and cauliflower. Place the cut up vegetables in a large plastic bin. Sprinkle 1 cup of salt over vegetables and let it sit over night. Drain well and rinse off salt with water. Remove the seeds from the red and green peppers and cut up into small pieces. Add the rinsed off vegetables and place in large kettle or pot along with the vinegar, mustard seeds. Place the mixed pickling spices in a bag or cloth to keep them together so they can be fished out later. Mustard seeds remain in the relish. Cook until vegetable are soft, not mushy! Remove mixed spice bag and add 5 cups of sugar. Cook ten more minutes until sugar is melted. Bottle in sterilized canning jars. Makes a lot!   • green tomatoes - 9 lb (4 kg)
  • sugar - 1 cup (250 g)
  • oil - 1 1/5 cups (300 ml)
  • salt - 4/5 cup (200 g)
  • dill - 3 - 4 bunches
  • vinegar - 1 2/3 cups (400 g)
  • garlic - 2 heads
How to cook:
  1. Pick out healthy green tomatoes, cut them into slices and pour the salt and sugar over them.
  2. Let them sit in the marinade for at least 2 hours, then drain them.
  3. Mix the vinegar and oil, bring the mixture to a boil and pour it over the green tomatoes.
  4. Sprinkle on finely chopped dill. Arrange the tomatoes tightly in jars, while putting dill and black pepper in between them.
  5. Top off with the marinade and sterilize for about 15 min.
