  • 11 lbs cucumbers
  • 3 cups apple cider vinegar
  • 1 cup white vinegar
  • 4 cups water
  • 3 tbsp honey
  • 2 tbsp canning salt
  • 5 tsp dill seed (separated)
  • 10 cloves garlic (peeled and smashed)
  • 10 hot peppers (or ½ tsp red pepper flakes per jar)

How to cook:
  1. In a 6-quart saucepan, combine the two kinds of vinegar, water, honey, and salt. Bring to a boil and reduce to a simmer.
  2. To prepare the cucumbers, cut off ½-inch on each end and discard. Slice ¼-inch slices and set them aside in a bowl. If not using fresh cucumbers, soak the cucumbers in ice water for 2 hours.
  3. To each sterilized pint jar, add one hot pepper or red pepper flakes and one smashed garlic clove. Pack cucumbers in each jar, leaving ½-inch headspace. Add ½ tsp dill seed on top of cucumbers.
  4. Pour prepared brine over prepared cucumbers, leaving ½-inch headspace. Wipe the rim of the jar and place on the lids and rings according to package instructions.
  5. In a prepared water bath, process the jars for 10 minutes, adjusting for altitude according to the USDA canning guide.
  6. Remove from the water bath and cool jars on a rack for 12 hours.
  7. Store in a dark place and enjoy anytime after two weeks.

  • 2 cups water
  • 1 ¾ cups white vinegar
  • 1 ½ cups chopped fresh dill weed

  • 1 quart white vinegar

  11. Next day, and each consecutive day for 5 days total, stir in one additional cup of sugar.
  12. Do not reheat when sugar is added.
  13. At the end of the 5th day, pickles are done and may be stored in covered jar.
  14. Do not seal jars.
  15. Pickles will keep indefinitely and get better with age.

Ingredients:
  • 1 46-ounce jar whole dill pickles
  • 1/2 cup white vinegar
  • 1/2 cup pickle juice from the jar
  • 3 cups sugar
  • 1 heaping tablespoon pickling spice

How to cook:
  1. Drain all the pickle juice from the jar into a bowl and set it aside. Remove the pickles from the jar.
  2. Into that pickle jar (or any mason jar), pour 1/2 cup of reserved pickle juice, as well as the white vinegar, sugar, and pickling spice.
  3. Put the lid on tightly and give it a good shake. Sugar will not be dissolved but that is okay.
  4. Slice whole pickles into slices, thick or thin, based on your preference. Return sliced pickles to the jar.
  5. Place the lid on the jar and shake again. Set it out on the counter for a few hours, turning upside down every hour or so, and then right side up again the next hour. Place pickles in the refrigerator after a few hours. Allow them to marinate for about three days for full flavor.
