  • 12 lasagna noodles
  • 10 ounce package frozen chopped spinach
  • 1 egg
  • 15 ounces ricotta cheese
  • 8 ounces shredded mozzarella cheese (divided)
  • ½ cup grated Parmesan cheese
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 25 ounce jar marinara sauce

How to cook:
  1. Bring a large pot of salted water to a boil. Cook lasagna noodles according to package directions for al dente. Drain, rinse with cold water, and lay noodles out in a single layer on a sheet of parchment paper to cool and to keep them from sticking together.
  2. Meanwhile, thaw the spinach in a microwave safe bowl using the defrost setting or very low power in the microwave. (Alternatively, you can put the frozen spinach in the refrigerator the day before to thaw overnight.) Then wrap spinach in a clean kitchen towel and squeeze out the excess moisture.
  3. Preheat oven to 350° F.
  4. Crack the egg into a large bowl and use a fork to beat the egg slightly. To the bowl, add the spinach, ricotta cheese, all but 1 cup of the mozzarella, the Parmesan, salt and pepper. Stir until well combined.
  5. Spread 1 cup of the marinara sauce in the bottom of a large rectangular baking dish, such as a 13x9-inch dish. Spread ¼ cup of the cheese and spinach mixture evenly over each of the lasagna noodles. Roll up and place, seam side down, in the prepared baking dish.
  6. Spread remaining sauce over the tops of the roll ups and sprinkle on the remaining mozzarella cheese. (If you have extra marinara sauce, save it for serving with the roll ups.)
  7. Cover the dish with foil (you can spray the underneath side of the foil with cooking spray to prevent it from sticking to the cheese). Bake for 30 minutes and then uncover and bake for 5 to 10 minutes more, until cheese is melted and lightly browned.

How to cook:
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Bring a large pot of lightly salted water to a boil. Cook lasagna in boiling water until cooked through but firm to the bite, about 8 minutes; drain and lay noodles flat onto a flat surface.
  3. Heat olive oil in a skillet over medium heat. Cook and stir garlic in hot oil until fragrant, about 2 minutes. Transfer garlic to a large bowl; add spinach, ricotta cheese, mozzarella cheese, and salt. Stir mixture until evenly combined.
  4. Spread a heaping 1/4 cup of spinach mixture into the middle of each lasagna noodle. Roll noodle firmly around the filling. Arrange rolled noodles into a baking dish. Pour spaghetti sauce over the rolls. Cover dish with aluminum foil.

How to cook:
  1. Preheat oven to 350°. Make sure you drain the spinach well. Combine spinach, ricotta, Parmesan cheese, egg, garlic, Italian seasonings, chicken, and salt and pepper in a medium bowl. Pour about 1 cup sauce on the bottom of a 9 x 13 baking dish.

  • 12-15 lasagna noodles
  • 15 oz. ricotta cheese
  • 1, 10 oz. package frozen spinach, thawed
  • 1 large egg
  • 2 Tbsp. parsley (fresh, roughly chopped)
  • 10 oz. Mozzarella cheese (fresh) (shredded (about 2.5 cups))
  • 1/2 cup Parmesan cheese (shredded)
  • 1/3 cup Asiago cheese (shredded)
  • 1/3 cup Romano cheese (shredded)

How to cook:
  1. Cook the lasagna noodles according to package directions. Using tongs, carefully remove them from the stockpot and align them on parchment or wax paper, side by side. Preheat oven to 375°F.
  2. For the cheese filling: In a mixing bowl stir together the thawed spinach (moisture squeezed out), ricotta cheese, egg, parsley and season with salt and pepper to taste.
  3. In a separate bowl, combine the Mozzarella cheese, Asiago cheese, Parmesan cheese and Romano cheese. Stir 2 cups of the cheese into the ricotta/egg mixture and reserve leftover cheese for sprinkling on the roll ups prior to baking.
  4. To assemble lasagna roll ups: Spread 1/4 cup of the cheese mixture evenly along length of the noodles (You can just use your hands, it's easier). Add meat on top of cheese, if using.
  5. Roll noodles up jelly roll style to opposite end. Pour about 1 cup of the marinara sauce into the bottom of a 9x13 inch baking dish. Place lasagna roll ups in baking dish then cover the top with remaining marinara sauce and sprinkle with remaining cheese. Bake in preheated oven 30-35 minutes, or until heated through.
  6. Let cool for ~5-10 minutes before serving. Enjoy with more red sauce on top if desired.
