This simple but tasty meat square is a Scottish classic and is perfect packed inside a morning roll or as part of a full Scottish breakfast Unlike a traditional sausage, a Scottish square sausage has no casing which means it’s easy to make at home, hence why we thought it was about time we came up with our own Lorne sausage recipe.

Scottish style Sausage Rolls

Scottish style Sausage Rolls
These are a twist on the usual Sausage Rolls in that they use beef rather than pork sausage.

Number of ingredients: 12
Ingredients:
  • 1 lb. Ground Beef 85/15 grind
  • 1 package Puff Pastry, rolled out a little thinner, each sheet cut into thirds
  • 3/4 teaspoon salt
  • 3/4 teaspoon ground pepper
  • 3/4 teaspoon ground coriander
  • 1/4-1/2 teaspoon ground nutmeg **
  • 1 teaspoon lemon zest
  • 1 tablespoon Lemon Juice
  • 2 tablespoons softened or melted butter
  • 3/4-1 cup bread crumbs (homemade if possible
  • 1/4-1/2 cup water
  • 1 egg white (to brush on top of pastry when baking
How to cook:
  1. Mix the ground beef, spices, bread crumbs, butter together and add enough water to make it hold together. Set aside while you prepare the puff pastry. To make small snack size sausage rolls, cut the pastry into thirds. Using a rolling pin, flatten them slightly.
  2. Form some of the beef filling into a long rope, place onto the center of one of the strips of puff pastry and fold over, wetting the ends before pressing together with a fork. Cut into 5 equal pieces and place on a parchment covered baking sheet. Continue with the rest of the meat and pastry.
  3. Brush with egg white. Bake at 400 degrees for 25 minutes. Or... Take one of the strips of puff pastry, place 5 small meatballs on the center, cut in between each meatball, then fold over and place seam side down on a parchment covered baking sheet. Brush with egg white, and bake at 400 degrees for 25 minutes or until golden brown.
  4. I'm not fond of nutmeg, so used the minimum I could. To make sure you like the seasoning and to correct it at this point, I always take a small teaspoonful of the meat mixture, flatten into a patty and fry it to taste. This way you can add more of any of the spices. It's OK at this point for it to taste quite strong, the meat will be baked in the puff pastry and will mellow out some.

Ingredients:
  • 3 slices of Simon Howie Premium Steak Lorne
  • 1 sheet of ready-rolled puff pastry
  • 1 egg, beaten
  • Your choice of sauce – are you team red or team brown?!
How to cook:

  2. 1. Preheat the oven to 190°C/ 180°C fan assisted /Gas Mark 4.
  3. 2. Slice each slice of Lorne sausage into four equal parts. Then roll out the pastry and cut into equal rectangles. We find nine works best!
  4. 3. Add a squirt of sauce onto one side of each rectangle, and place a cube of Lorne on top. Brush the edges of each rectangle with egg.
  5. 4. Fold the pastry over and lightly press down the edges to seal. Crimp round the edges with a fork, and score a couple of lines on the top with a knife. Brush with egg, and repeat for all the remaining pastries.
  6. 5. Place on a non-stick baking tray and bake in the oven for 20 mins until golden.
  7. 6. Serve up while they’re hot, and enjoy!

Scottish Square Sausage
Make your own Scottish square sausage (slice) and serve it up in a crispy morning roll or as part of a full Scottish breakfast!

Ingredients:
  • 750 grams mince 20% fat (see notes)
  • 2 teaspoons ground coriander powder
  • 1/2 teaspoon grated nutmeg
  • 1/4 teaspoon onion powder
  • 2 teaspoons sea salt
  • 1 1/2 teaspoons black pepper
  • 1/4 teaspoon white pepper
  • 200 ml cold water
  • 150 grams panko breadcrumbs
  • 1 200g black pudding, coating removed optional
Nutrition:
  • Calories: 137 kcal

How to cook:
  1. In a large bowl or mixer, combine beef mince, coriander powder, nutmeg, onion powder, salt, black pepper and white pepper. Mix briefly until meat and spices are combined.
  2. Add the water and mix well once more. Add the panko breadcrumbs gradually, stirring well to combine.
  3. Line a 1lb loaf tin with cling film. Add the prepared sausage mix to the pan and press down well with a spoon. If desired, add the black pudding half way through filling the tin. Lift the loaf tin up and drop it on a hard surface 2-3 times to get rid of any air pockets. Wrap the cling film tightly over the top of top of the sausage and set aside in the fridge to chill for 2 hours.
  4. After 2 hours, remove the sausage from the loaf tin and place in the freezer for 2-3 hours or until semi-frozen. At this stage, the sausage can be unwrapped and sliced into 18 individual sausages.
  5. Once sliced, wrap the sausages individually or in batches as desired and return to the freezer.
  6. To serve: defrost sausage slices in the fridge for 5-6 hours (or overnight). Once defrosted, heat a frying pan with 1 teaspoon of vegetable oil over a medium heat. Fry the sausage slices for 5-6 minutes, turning often until browned and cooked through.
  7. Serve on a crispy morning roll or as part of a full scottish breakfast!

  • 450g (1lb) minced beef
  • 450g (1lb) minced pork
  • 250g (1.5 cups) breadcrumbs (not fresh)
  • 1 tsp ground black pepper
  • 1 tsp salt ( add to taste)
  • 1.5 tsp coriander
  • 0.5 tsp nutmeg
  • 0.5 tsp mace
  • 120ml (1/2 cup) cold water

How to cook:
  1. Line your loaf tin, or whatever you’re using to make the square sausage, with clingfilm, with enough hanging over the edges to wrap over the opening once you’ve put the sausage meat in it.
  2. Add all the ingredients to a bowl and use your hands to thoroughly combine.
  3. Squash the sausage meat into the loaf tin as densely as possible. If you have any leftover you can set aside to make meat patties out of it!
  4. Wrap the clingfilm over the top so it’s fully covered and place in the freezer for 2 hours, or until firm enough to slice.* Alternatively, leave it in the refrigerator for 24 hours until it is firm.
  5. Remove the sausage from the tin using the clingfilm to lift it out and then cut into 1cm slices.
  6. You can use it immediately, put it in the fridge to be used within the next 2 days, or put pieces of baking paper between slices and place them in a container to fully freeze and pull out to use as you wish.
  7. Cook in a frying pan for a few minutes each slide or grill and then serve in a morning roll with your choice of sauce, or as part of a full Scottish breakfast!
