Ingredients:
  • 8 tablespoons olive oil (divided)
  • 6 garlic cloves (minced)
  • 2 cups unseasoned coarse breadcrumbs
  • 2 cups finely chopped walnuts (about 200 grams)
  • 4 tablespoons fresh parsley (chopped)
  • 3/4 cup of golden raisins (plumped (about 100 grams))
  • 1 pound spaghetti (454 grams (1 package))
  • salt (to taste)
  • pepper and crushed red pepper flakes ( to taste)
  • Orange peel (optional)

How to cook:
  1. In a large skillet, over medium heat, heat about 2 tablespoons of olive oil.
  2. Sauté the garlic until fragrant, 1-2 minutes (do not brown).
  3. Reduce heat to medium low and add the breadcrumbs.
  4. Add 2 more tablespoons of olive oil and combine. Stir together for about 2 minutes (breadcrumbs will get slightly toasted and should absorb the oil).
  5. Add the chopped walnuts and stir fry for another 2 minutes.
  6. Add raisins and parsley. Stir to combine for 1-2 minutes. Set aside. Add up to 1 cup of the cooking water (from the pasta) if the mixture appears to dry.OPTIONAL: Add orange peel and combine with the raisins and parley.
  7. Meanwhile bring a large pot of salted water to a rolling boil.
  8. Add the spaghetti and cook until al dente.
  9. Drain the pasta and reserve about 1 cup of the cooking water. Drizzle 2 more tablespoons of olive oil.
  10. In a large serving dish, alternate layers of pasta and bread mixture (top with bread mixture). Note: Remove orange rind if used in the mixture.
  11. Garnish with parsley and drizzle remaining olive oil.

St. Joseph's Sawdust is a classic pasta dish for Louisianians of Sicilian descent.

Ingredients:
  • 2 cups fresh bread crumbs*
  • 6 tablespoons olive oil, divided
  • 2¼ teaspoons salt, divided
  • 1 pound spaghetti
  • 1/3 cup unsalted butter
  • ¼ cup sliced garlic
  • 8 tablespoons minced fresh oregano, divided
  • ½ teaspoon crushed red pepper
  • 3 teaspoons lemon zest, divided
  • Garnish: fresh oregano
How to cook:
  1. Preheat oven to 350°.
  2. On a rimmed baking sheet, toss together bread crumbs, 1 tablespoon olive oil, and ¼ teaspoon salt.
  3. Bake until lightly browned and crisp, 7 to 9 minutes, stirring occasionally. Cool.
  4. Cook pasta in salted boiling water until tender. Drain, reserving ½ cup cooking liquid.
  5. In a large Dutch oven, heat remaining 5 tablespoons olive oil and butter over medium heat. Add garlic; cook until lightly browned, about 5 minutes. Add pasta, half of breadcrumbs, remaining 2 teaspoons salt, 6 tablespoons oregano, red pepper, and 2 teaspoons lemon zest; toss well. Add some of the reserved cooking liquid, if needed, to moisten. Spoon into a large serving bowl. Sprinkle with remaining bread crumbs, remaining 2 tablespoons oregano, and remaining 1 teaspoon zest. Garnish with oregano, if desired.

Growing up, one of my favorite meals that my mom made was this St. Joseph’s Day Pasta or my family's take on Pasta e Ceci.

Ingredients:
  • 1 lb pasta
  • 1 yellow onion
  • 2 cans chickpeas
  • 5 garlic cloves
  • 1/2 cup bread crumbs
  • 1 cup loosely packed parsley
  • olive oil (This is for cooking the onions and garlic, toasting the bread crumbs and finishing the dish.)
  • salt (Use to season the pasta water and to season as you go.)
  • grated cheese (This is for topping at the end.)
How to cook:
  1. Finely chop the onion and mince the garlic.
  2. Cook onion and garlic over medium-high heat with olive oil and a pinch of salt.
  3. Drain and rinse two cans of chickpeas.
  4. Once the onion is translucent and the garlic is fragrant, add the chickpeas with a pinch of salt.
  5. Cook your pasta to the package instructions.
  6. Reserve about a cup of pasta water.
  7. Toast bread crumbs in a pan with olive oil. Cook them until they turn a golden brown, moving often. Set aside.
  8. Finely chop parsely and set aside.
  9. Drain pasta and add to the pan with chickpeas, garlic, and onion.
  10. Add a drizzle of olive oil and a splash of pasta water to the pasta and chickpea mixture (about two tablespoons of each).
  11. Mix well and salt to taste.
  12. Top with each plate with toasted breadcrumbs, grated cheese and parsley.
  13. Serve and enjoy!
