- 2 cups carrot ribbons (made with a vegetable peeler) 500 mL
- 1 pkg organic baby spinach 312 g
- 1 cup halved grape tomatoes 250 mL
- 1/2 cup remaining balsamic vinaigrette, divided 125 mL
- 2 grilled strip loin grilling steaks ( 6 oz/ 170 g)
- 2 cups cooked Yellow Petites Potatoes 500 mL
- 1 shallot, thinly sliced
- 1/2 tub crumbled goat cheese 57 g

- In a large bowl, gently toss together the carrot ribbons , the spinach, grape tomatoes and half the balsamic vinaigrette. Assemble on a large serving platter.
- Thinly slice grilling steak and cut potatoes into quarters; add to platter. Rinse shallot in cold water and arrange on salad. Sprinkle salad with goat cheese crumbles. Drizzle with remaining balsamic vinaigrette. Divide between 4 plates.

- 6 cups fresh spinach, rinsed and dried
- ½ cup dried cranberries
- ½ cup walnut halves
- 1 tomato, sliced
- 1 pound top round steak, thinly sliced
- 1 pinch salt
- 1 pinch ground black pepper

- Arrange spinach on a large plate. Sprinkle with cranberries and walnuts, and arrange tomato slices on top. Set aside.
- In a non-stick skillet (or a regular skillet coated with non-stick spray) cook steak over medium heat until no pink remains and steak is thoroughly cooked.
- Arrange cooked steak over salad. Sprinkle salt and pepper on top, and drizzle with your favorite dressing. Note: I suggest using a light flavored dressing. Citrus dressings taste especially good on this salad!

Ingredients:
- 1 -5 oz bag organic baby spinach
- 1 ripe but firm avocado (diced)
- 1/4 cup dried cranberries (my low carb friends can omit)
- Handful roasted pine nuts
- 1 pinch sea salt
- ⅓ cup extra virgin olive oil
- 3 Tablespoons white balsamic vinegar
- 2 teaspoon minced garlic
- Generous pinch Maldon Flaked Sea Salt
- A few turns of freshly ground black pepper
How to cook:
- Salad:
- Place all salad ingredients on a platter.
- Dressing:
- Place all ingredients in a bowl and whisk until emulsified.
- Lightly dress salad and toss.
- Place salad on plate and 'finish' by placing a pinch of sea salt between the thumb and forefinger and gently rub the fingers together sprinkling the salt lightly over the salad. Eat and enjoy!

- 1 cup onion, thinly sliced
- 2 cups sliced mushrooms
