- 2 tablespoons brown sugar substitute (lakanto golden) (29g)
- 1/2 teaspoon vanilla extract

- 1/2 teaspoon baking powder
- 1/2 teaspoon xanthan gum
- 1/4 teaspoon salt
- 1 1/4 cups almond flour (170g)

- Preheat the oven to 350 degrees F.
- Melt the butter (it should be melted, but not hot).
- Put the butter and sugar substitutes in a mixing bowl and beat until combined. Add the vanilla and egg, and beat until combined.
- Add the almond flour, baking powder, xanthan gum and salt. Beat until combined.
- Add the chocolate chips to the dough and stir in with a spoon.
- Use the spoon to scoop out dough for the size of cookie you want and place in a ball on a baking tray covered with parchment paper.
- Bake for 12 minutes at 350 degrees F until the tops are golden brown.
- Allow to cool for 30 minutes before removing from the tray.

- 2 cups all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- 1 cup of vegetable oil spread
- ½ cup Splenda® Stevia Jar Sweetener
- 1 egg, room temperature
- ½ cup plain nonfat Greek yogurt, room temperature
- 1-ounce box (28g) sugar-free instant vanilla pudding mix
- 1 ½ teaspoons mint extract
- 1 teaspoon green food coloring

On slow speed, add the flour mixture into the pudding mixture and mix until well combined, but do not over-mix. Fold in the chocolate chips.
- Using a 2-tablespoon cookie scoop, drop spoonfuls onto prepared baking sheet, 2 inches apart. Press down slightly as the cookies do not spread very much while baking (should be about ½” thick).
- Bake for 10 minutes or until just slightly browned on the edges. Cool on rack for 1 minute and then move to a wire cooling rack. Enjoy!
