Heart-Shaped Pancakes with Strawberry Sauce

Ingredients:
- Strawberry sauce, recipe follows
- Icing sugar, optional
- 105g plain flour
- 250ml skimmed buttermilk
- 125ml skimmed milk
- 2 large eggs
- 1/4 tsp salt
- 1 1/2 tsp baking powder
- 1/2 tsp bicarbonate of soda
- 1 Tbsp honey
- 1/4 tsp vanilla essence
- 105g wholemeal flour
- For Strawberry sauce:
- 2 Tbsp maple syrup
- 1 tsp lemon juice
- 450g strawberries, fresh or frozen (unsweetened, thawed)
How to cook:
- 1) Preheat oven to 93C. Preheat a large nonstick griddle or skillet over a medium-low flame.
- 2) In a medium bowl, whisk together the dry ingredients (flour through salt).
- 3) In another medium bowl, beat together the eggs, buttermilk, non-fat milk, honey and vanilla.
- 4) Stir the wet ingredients into the dry ingredients, mixing only enough to combine them. The batter will be somewhat lumpy.
- 5) Use a 1/3 cup measuring cup to ladle the batter onto the griddle or skillet. Flip the pancake when the top is bubbling and it is golden brown on the bottom. Then cook until the other side is golden brown. Hold on an oven proof plate in the oven until the entire batch is ready. 6) When all the pancakes are ready, cut them into heart shapes with a heart shaped cookie cutter. Ladle about 75ml of the strawberry sauce onto each plate, place pancakes on top and sprinkle with icing sugar, if using.
- Strawberry sauce: Puree strawberries to a chunky puree. Heat them in a small saucepan over a low flame, until they are just warm. Stir in lemon juice and maple syrup.

Ingredients:
- 1 ¼ c all purpose flour
- 2 tsp baking powder
- 1/4 tsp baking soda
- 2 Tbsp granulated sugar
- 1/4 tsp kosher salt
- 4 Tbsp butter (melted, then cooled)
- 1 c buttermilk
- 1 egg
- 1 tsp vanilla extract
- 1 Tbls vegetable oil
- 1 Tbls butter
- 8 fresh strawberries (cut in strawberry shapes (see tips in post))
- 1 Tbls butter
- 2 Tbls pure maple syrup (grade B )
How to cook:
- Heat cast iron (or heavy bottom) skillet to medium.
- In mixing bowl, whisk together flour, baking powder, baking soda, sugar and salt; set aside.
- In a medium size mixing bowl, lightly whisk together the buttermilk, melted butter, egg and vanilla. Note: Be sure the melted butter has cooled before adding to the mixture.
- Add the flour mixture to the wet mixture and whisk or stir until combined. If mixture seems to dry, add more buttermilk (or whole milk) until mixture is almost pourable. It should still have a thick consistency and be lumpy. Let sit for at least 5 minutes before making pancakes.
- Heat cast iron pan (or heavy bottom pan) to medium. When the pancake batter is ready, coat the bottom of the pan with half the vegetable oil and half the butter.
- With a ladle or large spoon, drop about 1/4 cup of the batter onto the center of the pan. Smooth out the batter to create a round pancake. It should be about 3/4 inch thick.
- When bubbles in the center of the pancake pop, flip the pancake. It's ok to lift the underside of the pancake with a spatula to peek to see if it's golden brown. Once flipped, cook another minute, or until the other side is golden brown. Continue with remaining batter, adding more oil/butter to pan as needed to keep pancakes from sticking.
- Serving
- Add a little butter between pancakes and on the top. Drizzle with syrup.

- Preheat one or two nonstick skillets over medium heat. Pour all the dry ingredients into a large mixing bowl and whisk. Then add the milk, egg, vanilla, melted butter, and strawberry jam. Whisk until smooth. If using squirt bottles for pancake art, stir in another 1/4 cup of milk and do not add the fresh strawberries into the batter. If making normal pancakes, fold in the fresh strawberries.
- For Pancake Art: Pour the thin batter into plastic squirt bottles. Make sure the hole in the lid is the size of a bb. If not, trim the end with scissors. Butter the skillet, then slowly squirt the batter into the shape of a heart. Use the batter to make a pattern inside the heart: dots, stripes, zigzags. Then wait an minute and fill in the open areas inside the heart. Wait another minute, then flip the pancake(s) and cook another 1-2 minutes. Repeat and have fun making designs!
- If making classic pancakes, ladle 1/4 portions of the batter into the skillet(s). Cook for 2-3 minutes per side. Then butter the skillet and repeat. Serve with maple syrup or strawberry jam, and a side of heart shaped bacon and eggs.
