- 9 ounces (255g) white chocolate chips
- 1 cup + 6 tbsp (330ml) heavy whipping cream, cold, divided
- 1/2 cup (58g) powdered sugar
- 1/4 tsp vanilla extract
- 3/4 cup (110g) chopped strawberries
- 2 tbsp sugar
- 1 tsp water

- To make the white chocolate mousse, place the white chocolate chips into a medium sized bowl.
- 2. Heat 6 tbsp (120ml) heavy cream until it just starts to boil, then pour over the white chocolate chips. Cover with clear wrap and let sit for 3-4 minutes, then whisk until smooth. Sometimes the white chocolate doesn’t completely melt. If that happens, microwave white chocolate mixture in 10 second intervals, stirring well between each interval, until smooth. Set aside to cool to room temperature.
- . Whip remaining 1 cup (240ml) of heavy whipping cream in a large mixer bowl fitted with the whisk attachment. Whip until cream begins to thicken, then add powdered sugar and vanilla extract. Continue whisking until stiff peaks form.
- . Carefully fold about 1/3 of the whipped cream into the cooled white chocolate mixture until combined.
- . Fold in the remaining whipped cream until well combined. Mousse will seem a bit thin, but will thicken in the fridge.
- . Divide mousse evenly between 5 cups or jars and refrigerate until firm.
- . While the mousse firms, combine the strawberries, sugar and water and allow to sit in the fridge for 1-2 hours. The sugar will draw water out of the strawberry, creating a “sauce”. Spoon the strawberry mixture over the white chocolate mousse cups before serving.

- 1 12-ounce bag white chocolate chips
- 4 tablespoons shortening
- optional: sprinkles, food coloring

- Rinse strawberries with cold water, gently (but thoroughly) pat dry with paper towels, set aside. Line a small-medium baking sheet (something that will fit in your fridge) with aluminum foil.
- In a microwave safe bowl (or double boiler) melt chocolate chips with shortening and stir until smooth. Carefully dip strawberries into melted chocolate, turning all the way around so that ll sides are coated with chocolate. Place on prepared baking sheet.
- When all strawberries are dipped, place baking sheet in the fridge to cool. Add a few drops of food coloring (color of your choice!) into the melted chocolate (if it has begun to set up just put it back in the microwave on half heat for a few seconds and give it a stir) and stir until smooth and coloring is even. Remove strawberries from fridge. Carefully transfer colored chocolate into a zip lock bag, seal it and snip off just a tiny bit of one bottom corner. Drizzle colored chocolate onto strawberries in any design you like. Top with sprinkles. Return to fridge for about 10 minutes to set up. Store in airtight container in fridge up to 3 days.

- 2 cups white sugar
- 1 cup butter, softened
- 1 (3 ounce) package strawberry flavored Jell-O®

- Grease two 9-inch round cake pans and line with waxed paper.
- Mix flour and baking powder in a bowl.
- Beat white sugar, butter, and gelatin together in a separate bowl until fluffy; add eggs, one at a time, beating well with each addition.
- Stir alternately flour mixture then milk, into sugar mixture to form a smooth batter. Stir vanilla extract and strawberries into batter until combined.
- Divide batter between prepared cake pans.
- Bake in the preheated oven until a toothpick inserted into the center of both cakes comes out clean, 25 to 30 minutes; cool completely.
- Stir cream cheese, white chocolate, and heavy whipping cream in a saucepan over medium heat until combined and white chocolate is melted, about 5 minutes.
- Stir confectioners' sugar into cream cheese mixture until a smooth frosting forms. Allow to cool and set.
- Spread a layer of frosting over the top of one cake. Place the second cake on top of frosting layer. Frost the top of second cake and sides of both cakes with remaining frosting.

- Prep
- Line a large baking sheet with parchment paper.
- Rinse and dry completely the strawberries, removing any that aren’t good. Water isn’t good for any type of chocolate so make sure to dry all of it off.
- Melt
- In a microwave safe dish melt your chocolate candy melts. Make sure to turn your microwave to 50% power, microwave for 30 secs, stir and repeat until melted. This will take around 1-2 minutes.
- Dip your strawberries in the melted white chocolate. It helps to hold the strawberry by the green leaves, dip and swirl. Let any excess white chocolate drip off and you can even scrape the bottom side (the side that will be sitting on the parchment paper) on the edge of the bowl.
- Set Up
- Place strawberries on prepared baking sheet and allow to set up. If you are putting sprinkles on you can sprinkle them on now- before the white chocolate hardens.
- Decorate
- If you want to drizzle with chocolate or colored candy melts, allow the dipped strawberries to set up, melt your candy melts in the same way you melted the white chocolate candy melts. Then place the melted candy melts in a piping bag or a zip loc bag and cut the tip off to make a small hole. Then drizzle the strawberries.
