  • 4-5 large green (or any color) peppers
  • 3/4 pound (340.2g) lean ground beef
  • 2 teaspoons (10g) minced garlic
  • 1 medium onion (, diced)
  • 1-2 teaspoons (1g-2g) minced thyme
  • 1 16 oz can diced tomatoes
  • 1/4 cup (62.5ml) beef broth or water
  • 1-1½ cup (250g-375g) cooked rice
  • 1 cup (165g) frozen corn
  • 1 green onion (, diced)
  • 1 teaspoon (4g) Creole seasoning

How to cook:
  1. Heat up a skillet with oil over medium-heat and cook ground beef until browned or no pink is visible.
  2. Add in garlic, onions and thyme , stirring constantly and cook for 1-2 minutes or until onions are wilted.
  3. Then add in diced tomatoes with juice. Bring to a simmer for 4-5 minutes. Add about 1/4 water, if desired.
  4. Stir in cooked rice, drained corn kernels, spring onions and Creole seasoning. Adjust taste with salt and pepper. Mix them up. Remove from heat and set aside.
  5. Stuffed Green Bell Pepper Assembly
  6. Trim the tops off each bell pepper and remove seeds and membrane from inside and discard. Meanwhile, preheat the oven to 350 degrees F.
  7. To accelerate cooking time Blanch bell pepper in a large pot of boiling water for about 2-3 minutes; remove with a slotted spoon and let it dry on paper towels or clean dish, towel.
  8. Grease the baking dish and place the hollowed green bell peppers in it. Scoop meat mixture into each bell peppers until full. Sprinkle with cheese on top, if desired.
  9. Bake in preheated oven for 30-35 minutes or until cheese is bubbly and browned and peppers are tender. Serve with salad or toast.

  • 6 bell peppers, (any color)
  • ice water, (for blanching)
  • ½ cup long-grain white rice, (uncooked)
  • 1 cup water
  • 1 tablespoon olive oil
  • ¾ cup (1 small) onion, (chopped)
  • 1 pound ground beef
  • 2 teaspoons garlic, (minced)
  • 1 can (15 ounces) tomato sauce, (divided)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon kosher salt
  • 1 teaspoon pepper
  • 1 teaspoon Italian seasoning
  • 1 cup mozzarella cheese, (shredded, divided)

How to cook:
  1. Preheat oven to 350°F.
  2. Blanching Peppers (Optional, See Notes)
  3. Cut off tops of peppers; remove seeds.
  4. Cut off the tops of the peppers and remove the seeds only.
  5. Bring water to a boil.
  6. Fill a large pot with water and bring to a boil.
  7. Cook peppers.
  8. When the water gets to a boil, put in the peppers and let them cook for 3 minutes. They should be bright green (or yellow, or red, whatever color peppers you are using) after a few minutes.
  9. Fill a bowl with ice water.
  10. As the peppers are cooking, fill a large bowl with ice water.
  11. Transfer peppers into ice water.
  12. With a slotted spoon or tongs, transfer the peppers into the ice water immediately. This ‘shocking’ will stop the peppers from cooking any longer.
  13. Drain peppers from water. Pat down with a paper towel.
  14. After the peppers have cooled completely, drain them from the ice water and pat them down with a paper towel.
  15. Remove membranes from peppers and place in a baking dish.
  16. Remove the membranes from the peppers and discard. Then, place the peppers in a baking dish while you prepare the ground beef stuffing mixture.
  17. Stuffing Mixture
  18. Prepare rice.
  19. Place the rice and water in a saucepan and bring to a boil. Reduce heat, cover, and cook 10 minutes (rice will be slightly firm).
  20. Cook onions, beef, and garlic.
  21. In a skillet over medium heat, add oil. When oil is hot, add onions, cook 2-3 minutes or until translucent. Add beef and cook until browned. Add garlic, cook 1 more minute or until fragrant.
  22. Add ingredients to the skillet.
  23. To the skillet, add the cooked rice, ½ can of the tomato sauce, Worcestershire sauce, salt, and pepper.
  24. Spoon mixture into each pepper. Top with sauce.
  25. Spoon an equal amount of the mixture into each hollowed pepper. Mix the remaining tomato sauce and Italian seasoning in a bowl and pour over the stuffed peppers.
  26. Top with cheese.
  27. Top with mozzarella cheese.
  28. Bake peppers and baste with sauce.
  29. Bake 1 hour, basting with sauce every 15 minutes until the peppers are tender.

  • 1 pound lean ground beef
  • 1 large yellow onion (diced)

How to cook:
  1. Preheat oven - Preheat oven to 375°F and spray two large baking pans with non-stick cooking spray. Set aside.
  2. Boil water - Bring a large pot of water to a boil over high heat. As the water comes to a boil, prepare your sauce.
  3. Brown the ground beef - Add 1 teaspoon of olive oil to a large heavy-bottomed Dutch oven or saucepot set over medium-high heat. Brown the ground beef and sprinkle with salt and pepper, to season. Transfer beef to a clean plate and set aside.
  4. Cook the onions and garlic - Add the remaining teaspoon of olive oil and return to medium heat. Add the onions and cook for 5 minutes, or until soft and translucent, stirring often. Stir in the minced garlic. Cook, stirring continuously, for 1 minute.
  5. Add the tomato paste and seasoning - Add the tomato paste to the vegetables, mixing thoroughly until combined. Add the Italian seasoning, salt, and pepper. Mix well to combine.
  6. Add tomatoes - Stir in the tomatoes, sugar, Worcestershire sauce, water, and return the cooked ground beef back to the pot. Mix well to combine. Bring sauce to a low boil, then reduce heat to medium-low, cover, and allow the sauce to simmer for at least 20 minutes.
  7. Blanch your bell peppers - Working in batches, add the stemmed and seeded bell peppers to the pot filled with boiling water. Allow peppers to cook for 2 minutes max. Use tongs and immediately transfer to an ice water bath to stop any additional cooking. Repeat until all bell peppers have been boiled.
  8. Transfer peppers to prepared baking pans - Transfer your blanched peppers to your prepared baking pans (6 peppers fit comfortably in one pan, so plan to for two baking pans or cook your peppers in batches.
  9. Combine sauce with rice and cheese - After the sauce has simmered for approximately 20 minutes, remove from heat and add the cooked rice, 1 cup of shredded mozzarella cheese, and 1 cup of shredded parmesan cheese. Mix well to combine. Season with additional salt and pepper, to taste.
  10. Fill the peppers - Stuff each pepper with filling, top with a few leaves of fresh oregano (optional) and top with the remaining shredded mozzarella cheese. Repeat until all peppers have been stuffed.
  11. Bake - Transfer to the oven and bake for 15-20 minutes, or until cheese is golden and melted. Remove from the oven and enjoy.

How to cook:

  2. Cut the tops off the peppers (reserve the tops), remove seeds and membranes and discard. Chop tops of the peppers to add to the filling.
  3. Bring a large pot of water to a boil and cook peppers 5 minutes. Remove and drain well.
  4. In a large skillet, brown beef, sausage, onion & garlic over medium high heat until no pink remains. Drain any fat.

  8. Cover with foil and bake 35 minutes. Remove foil, baste peppers with any sauce in the bottom. Top with cheddar and bake an additional 10 minutes or until cheese is melted and peppers are tender.
