Ingredients:
  • 1 tablespoon vegetable oil
  • 2 pounds boneless, skinless chicken thighs
  • Salt and ground black pepper
  • 1 tablespoon dark brown sugar
  • 2 teaspoons paprika
  • 1/4 teaspoon cayenne
  • 1 cup your favorite wing sauce, such as Frank's RedHot
  • 2 tablespoons unsalted butter, optional
  • 2 medium carrots, diced
  • 2 celery ribs, diced
  • 2 tomatoes, seeded and diced
  • One 36-inch fresh French loaf
  • 1 cup blue cheese crumbles
  • Homemade Ranch Dressing, recipe follows
  • 1 1/2 cups mayonnaise
  • 1/2 cup buttermilk
  • 1 teaspoon granulated garlic
  • 1/2 teaspoon fresh dill, minced
  • 1/2 teaspoon honey or agave syrup
  • 1/3 teaspoon salt
  • 1/4 teaspoon Dijon mustard
  • 1/8 teaspoon ground black pepper
How to cook:
  1. Preheat the oven to 425 degrees F.
  2. Heat a 12-inch skillet over medium-high heat. Add the vegetable oil. Sprinkle both sides of the chicken with some salt and pepper, the brown sugar, paprika and cayenne. Sear both sides of the chicken in the skillet until golden, about 4 minutes. Add in the wing sauce, bring to a simmer and finish off in the oven until the chicken registers 165 degrees F on an instant-read thermometer, about 15 minutes. Let cool, and then pull the meat with your hands or two forks. Adjust the seasoning if necessary, add the butter if using, and place back in the oven at BROIL until crusty and caramelized on top, about 4 minutes.
  3. In a bowl, the combine carrots, celery and tomatoes, and season with salt and pepper. Mix until combined.
  4. Cut the French loaf horizontally. Place an even layer of blue cheese crumbles on the bottom, then the chicken and then the veggies. Serve with a side of Homemade Ranch Dressing.
  5. Mix the mayonnaise, buttermilk, garlic, dill, honey, salt, mustard and pepper in a bowl. Store in an airtight container.

  • 1 tablespoon olive oil
  • 1 onion (halved and sliced)
  • 2 chicken breasts
  • 1/4-1/2 cup buffalo sauce
  • 5 slices pepperjack cheese
  • 4 hoagie buns
  • 1 tomato (sliced)
  • 4 large pieces lettuce
  • 1/4 cup bleu cheese dressing

How to cook:
  1. Saute onions
  2. Heat a large heavy skillet over medium-high heat. Pour in olive oil. Add in onions and saute until onions are soft and translucent, 5 to 7 minutes.
  3. Pound out chicken
  4. Meanwhile, place chicken breasts between two sheets of parchment or wax paper. Use a meat tenderizer or rolling pin to pound out the chicken until 1/4-inch thick.
  5. Partially cook chicken breasts
  6. Remove sauteed onions from skillet and set aside in a bowl. Place chicken breasts directly into hot pan. Cook about 2 minutes, then flip and cook another 2 minutes.
  7. Cut chicken into pieces
  8. Use two spatulas to chop the chicken into bite-size pieces. If you are using a non-stick skillet, remove the chicken and cut on a cutting board and then return to skillet.
  9. Combine ingredients and cook
  10. Add onions back to pan with chicken and pour buffalo sauce over the whole thing. Use 1/4 to 1/2 cup depending on personal tastes for spiciness. Stir to combine. Continue cooking until all chicken is cooked through.
  11. Melt cheese over chicken
  12. Add slices of cheese over the top. Cover the pan until cheese is completely melted.
  13. Assemble subs and serve
  14. Serve on toasted hoagie buns with tomato slices, lettuce, and a drizzle of bleu cheese dressing.

  • 1 cup Buffalo wing sauce
  • 1 (8-ounce) package cream cheese, softened

  • ½ cup mayonnaise
  • ¼ cup sour cream
  • 2 tablespoons hot buffalo wing sauce

  • 8 slices pepperjack cheese
  • ¼ cup roasted red bell peppers, drained and sliced

How to cook:
