My 11 month old had a little taste test of banana bread and he loved it so I searched for a sugar free banana bread recipe. This recipe comes from my new cookbook Naturally Keto.

Ingredients:
  • 500.00 ml wholemeal plain flour
  • 4 large bananas
  • 1 tsp Pure Stevia Extract Powder
  • 21.00 gm lemon juice
  • 1.25 gm bicarb of soda
  • 4.00 gm baking powder
  • 0.60 gm table salt
  • 75.08 gm olive oil
  • 1 large egg
  • 131.25 gm fruit juice
  • 4.40 gm vanilla extract
  • 82.50 ml L.S.A
  • 125.00 ml nuts, chopped
How to cook:
  1. Preheat oven to 180C. Line a medium loaf pan (7 1/2" x 3 1/2") with baking paper and set aside.
  2. Mash bananas in a medium sized bowl and add lemon juice, stevia extract and LSA.. and set aside.
  3. Mix flour, baking powder, baking soda, salt and chopped nuts in a large mixing bowl. (Sifting is not required but can be done to the flour, baking powder and baking soda if preferred.)
  4. In a small bowl, whisk eggs and stir in oil, fruit juice and vanilla extract. Add to the banana mixture.
  5. Stir dry ingredients in to wet ingredients until just well combined, do not beat or you will not end up with pieces of banana in your loaf. Stirring by hand is much preferred.
  6. Pour mixture into the loaf pan and bake on the middle shelf in the oven for about an hour or until a knife or skewer inserted in to the middle of the loaf comes out fairly clean. (it may be slightly sticky due to passing through banana pieces). Turn out the loaf on to a cooling rack.

  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda

  • 1/2 cup unsweetened orange juice
  • 1/2 cup raisins

  • 1/2 cup salted butter (melted or avocado oil)
  • 1/3 cup water
  • 1/2 tbsp banana extract (plus 1 tsp)
  • 1 tsp maple extract
  • 1/4 tsp vanilla liquid stevia
  • 1/2 cup Swerve brown sugar sweetener (packed or 190 grams)
  • 1/2 cup coconut flour (or 120 grams)
  • 1/2 cup ground flaxseed
  • 1 tbsp baking powder
  • 1 tsp ground cinnamon
  • 1 tsp xanthan gum (or gelatin)
  • 1/4 tsp salt
  • 1/2 cup sugar free chocolate chips
  • 1/2 cups walnuts or pecans, chopped

How to cook:
  1. Preheat the oven to 375°F. Line a 9 by 5-inch loaf pans with parchment paper, with the edges left hanging over the sides. Spray the parchment with cooking spray.
  2. Place the eggs, butter, water, extracts, and stevia in the bowl of a stand mixer (or a large bowl if using an electric hand mixer) and mix until well combined.
  3. In a large mixing bowl, whisk together the brown sugar sweetener, coconut flour, ground flaxseed, baking powder, cinnamon, xanthan gum, and salt. Pour the dry ingredient mixture into the wet ingredient mixture and blend until combined.
  4. Pour the batter between a bowl and stir in optional ingredients if using. Transfer the batter to the prepared loaf pan.
  5. Bake for 40 to 45 minutes, or until a toothpick inserted in the center of a loaf comes out clean. Remove from the oven and allow to cool completely in the pans.
  6. Once cool, remove from the pan by lifting up on the parchment paper.
  7. Storage: Wrap tightly in aluminum foil and refrigerate for up to 1 week or place in a zip-top freezer bag and freeze for up to 1 month.

How to cook:
  1. Preheat your oven to 350° F (180° C) and prepare a loaf pan.

  6. Fold in crushed walnuts with a spoon, then pour the batter into your prepared loaf pan.
  7. Make raspberry swirls out of your jam throughout the banana bread using a fork — don’t overmix!
  8. If desired, arrange an additional sliced banana on top of the batter!
  9. Bake for 60 minutes in the preheated oven or until cooked through and firm on the outside.Let it cool for 15-20 minutes before slicing!
