Avocado Peach Summer Salad

Avocado Peach Summer Salad

Ingredients:
  • 3-4 heads butter lettuce
  • 1 bunch fresh chives snipped
  • 2 sliced avocados
  • 4 persian cucumbers, sliced
  • 2 ripe peaches, sliced
  • 2 ripe nectarines, sliced
  • 1 lemon juiced
  • 3 tablespoons red wine vinegar
  • 6 tablespoons olive oil
  • 1 shallot finely minced
  • 2 cloves garlic finely minced
  • 1/3 cup freshly grated parmesan cheese
  • Kosher salt and freshly cracked black pepper to taste
How to cook:
  1. Carefully trim the butter lettuce leaves off the head. Rinse well and dry.
  2. Toss the full leaves, avocado, fruit, and snipped chives with the lemon parm shallot vinaigrette and serve on a large platter.

Ingredients:
  • 3 cups market lettuce any variety will work
  • 1/2 cup fresh mint leaves
  • 6 scallions
  • 2 ears corn on the cob
  • olive oil for drizzling
  • 1 avocado sliced
  • 1 cup Blistered Tomatoes and Herbs
  • crumbled goat cheese
  • 1 lemon juiced
  • 2 teaspoons champagne vinegar
  • 1/3 cup olive oil
  • kosher salt to taste
How to cook:
  1. Arrange the greens and mint on a large serving bowl.
  2. Preheat an outdoor grill over medium high heat. Drizzle the the scallions and corn with olive oil and place them on the grill and let char. The scallions will need 1-2 minutes and the corn 6-8. Once grill marks are present, remove from the grill. Slice the scallions into 1 inch pieces and remove the corn from the sob.
  3. Add the grilled vegetables to the serving platter along with the avocado, blistered tomatoes and crumbled goat cheese. Toss everything together and serve with the Lemon Vinaigrette served on the side

Watermelon Peach Salad

Ingredients:
  • 1 small seedless watermelon, cut into 1 inch cubes or melon balls
  • 1 shallot, finely chopped
  • 4 tablespoons torn mint plus extra for garnish
  • 2 tablespoons olive oil
  • Kosher salt and freshly cracked black pepper to taste
  • 1 sheet fresh feta cheese, cut into 1/2 cubes (about 1/2 cup once cubed)
  • 2 yellow peaches, sliced
  • 3 Persian cucumbers, sliced into ½ inch thick rounds
  • 4 tablespoons olive oil
  • 3 tablespoons red wine vinegar
  • 3 cloves garlic, chopped
  • 1 shallot, finely chopped
  • 1 teaspoon dried oregano
  • Kosher salt and freshly cracked black pepper to taste
How to cook:
  1. Combine the watermelon, shallots, and mint in a large bowl with the olive oil. Season the mixture with salt and pepper and toss to combine. Transfer to a fridge and let marinate for at least 1 hour, up to 3 hours.
  2. Remove from the fridge and add the sliced peaches, cubed feta, cucumbers and toss to combine. Transfer to a serving platter, drizzle with the vinaigrette and season with salt, pepper and extra mint.
  3. In a small bowl whisk together the vinaigrette ingredients and drizzle over the salad. Season to taste, adjusting as needed.
