Old Fashioned Lemon Squares

  • 1 cup softened butter (2 (8 oz) sticks)
  • ½ cup all natural cane sugar (regular white sugar may be substituted)
  • 2 cups all purpose flour | I used organic AP flour
  • 1 teaspoon vanilla extract
  • 4 eggs | I use large eggs
  • 1 ½ cups all natural cane sugar (regular white sugar may be substituted)
  • ¼ cup all purpose flour (see notes for how to make Gluten Free)
  • ⅔ cup of fresh squeezed lemon juice (about 4 lemons)
  • 1-2 lemons zested
  • 2 cups powdered sugar
  • 1-2 lemons zested
  • 2 lemons juiced (about ⅓ cup of fresh lemon juice)

How to cook:
  1. Shortbread Crust
  2. Prepare pan
  3. Preheat oven to 350F degrees and line a 9x13 inch pan with parchment paper or foil.
  4. Blend all ingredients together
  5. Shortbread Crust | Blend together the softened butter, vanilla, sugar and flour in a mixing bowl or stand mixer on low until smooth and combined.
  6. Prep and bake the crust
  7. Prep & Bake the Crust | Press the shortbread batter into the bottom of a parchment lined or well sprayed 9x13 inch baking pan <== my favorite pan company! Using a sheet of parchment or wax paper, press the batter evenly into the bottom of the pan. Bake at 350F degrees for 15-20 minutes, just until firm and starting to turn golden.
  8. Lemon Filling
  9. Make the Fresh Lemon Filling
  10. Whisk sugar and flour
  11. While the crust is in the oven; in a large mixing bowl, whisk together the sugar and flour.
  12. Whisk in eggs, lemon juice and zest
  13. Whisk in eggs into mixture, whisking well until frothy and sugar has dissolved, (cane sugar will take a little longer) then slowly whisk in lemon juice and zest from one-two lemons. (more is better in my opinion, but I like it tart!)
  14. Pour lemon filling on shortbread crust and bake
  15. Pour lemon filling over the hot, baked shortbread crust (or almond flour shortbread crust), returning to the oven for an additional 15-20 minutes. Give the filling a final whisk just before you pour it over the hot crust.
  16. Cool on a wire rack
  17. Bake until the filling feels firm when lightly touched. Lemon squares will firm up and set as they cool. Remove from oven and cool on a wire rack.
  18. Prepare Lemon sugar glaze
  19. Prepare Lemon Powdered Sugar Glaze
  20. Combine all ingredients
  21. Mix powdered sugar, lemon zest into medium mixing bowl, whisk to combine, slowly add lemon juice, whisking until glaze is desired consistency.
  22. Pour on Lemon shortbread cookie bars
  23. Once the lemon squares have cooled on a wire rack for about 20 minutes, then pour and smooth over warm (not hot) lemon shortbread cookie bars.
  24. Cool completely, then cover and refrigerate.
  25. Dust with powdered sugar
  26. *If desired, omit the lemon glaze and dust generously with powdered sugar instead. Be sure to wait until lemon bars are completely cooled.

How to cook:
  1. Heat oven to 350°F. In large bowl with electric mixer, beat base ingredients on low speed until crumbly. Press mixture evenly in bottom of ungreased 13x9-inch pan. Bake 20 to 30 minutes or until light golden brown.

How to cook:

  14. Cut into squares to serve.
  15. Leftover bars may be refrigerated but will need to come to room temperature for slicing.
