  • 1 cup walnuts (whole or roughly chopped)
  • 2 Tbsp brown sugar
  • 2 Tbsp white sugar
  • ¾ tsp salt
  • ⅛ tsp cayenne pepper
  • 2 Tbsp water

How to cook:

  2. Heat a pan over medium high heat and place the walnuts in the pan. Roast for 3-5 minutes, until lightly browned, stirring often to avoid the walnuts burning. Set aside for now.

  4. In a small bowl, mix together the brown sugar, white sugar, salt and cayenne pepper. Add the water and mix again. Pour in a cold pan and place over medium heat. Bring to a boil and let simmer for 5-10 minutes, until golden brown and all the sugar has melted. Take care so that the sugars don't burn . Do not stir after the mixture has started boiling - if it browns unevenly, instead tip the pan a bit to mix.

This is one of my favorite recipes to make when I need to make a snack really quick. I have made these nuts a couple of times and packaged them for Christmas gifts. They also make a good snack on a cold evening. I often make a double batch and use both pecans and walnuts. Salt can be varied depending on how salty you would like them to be. This recipe was originally from a really old Betty Crocker cookbook, but I varied it a little.

  • 1 tablespoon egg white
  • 2 cups pecans or 2 cups walnuts
  • 1/4 cup sugar
  • 1 tablespoon cinnamon
  • 1/2-1 teaspoon salt, to taste

  • 3 tablespoons butter
  • 1/4 cup white sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon

How to cook:
  1. Melt butter (3 tablespoons) in heavy bottomed skillet (I used stainless steel)
  2. Add walnuts (2 cups); stir to coat
  3. Add white sugar (1/4 cup), brown sugar (1/4 cup), and cinnamon (1/2 teaspoon); stir to coat.
  4. Continue stirring until sugars caramelize- they should not be grainy anymore, and begin to darken in color (about 3-4 minutes).
  5. Spread nuts out on a parchment covered baking sheet, sprinkle with sea salt, and allow to cool for at least ten minutes. If nuts are difficult to separate, you can break them apart after they've cooled for a bit.
  6. Eat the candied walnuts on their own, or add to salads for a sweet touch!
