I searched many recipes and not being a canner or having pickling ingredients on hand I went with the simplest recipe I found for a water/sugar ratio and added roasted red bell since I felt like pimentos would be a great addition as well as seeing what I believed were pimentos in the relish I bought. Ingredients:
- 7-8 large jalapeño peppers, with stems, membranes and seeds removed; chopped (see notes)
- 1/4 cup chopped red onion
- 2 cloves garlic, minced
- 2-3 tablespoons apple cider vinegar (see notes)
- 1 tablespoon honey
- 3/4 teaspoon kosher salt

- Add the chopped jalapeño peppers and red onion to a food processor and pulse several times, until broken down and minced. (Be careful not to let it go too long that it turns into mush or soup.)
- Transfer the jalapeño mixture to a bowl and stir in garlic, apple cider vinegar, honey and salt. Taste and adjust seasonings.
- Cover and store in the refrigerator for up to 10 days.

I found a jar of Sweet Jalapeno Relish at the store and tried it and fell in love. I searched many recipes and not being a canner or having pickling ingredients on hand I went with the simplest recipe I found for a water/sugar ratio and added roasted red bell since I felt like pimentos would be a great addition as well as seeing what I believed were pimentos in the relish I bought. After simmering slightly I realized it was missing the pickle flavor the bought relish had so I added the dill chips. This turned so good and hotter than the store bought.

Ingredients:
- 1 pound(s) fresh jalapenos
- 1 cup(s) dill pickle chips
- 2 cup(s) water
- 1 1/4 cup(s) granulated sugar
- 4 ounce(s) jar pimentos
How to cook:
- Cut stems off of jalapenos and cut into halves or thirds. You may need to do the pulsing in two batches. Add jarred bell pepper and dill pickle chips. Pulse till finely chopped.
- In med size pan heat water, sugar. Add chopped veggies and simmer on very low for an hour or until water is absorbed or evaporated. Cool and place in jar. Refrigerate.
- This is just a side note, I did not have Dill pickle slices this last time so I used sweet pickle relish and decreased the sugar to 1 TBSP. It's a delicious HOT/sweet combo.

Ingredients:
- 1 gallon jalapeno peppers
- 8 large green tomatoes
- 3 pounds onions
- 6 large bell peppers(for color use red sweet peppers)
- 5 cups white vinegar
- 1 1/2 tablespoon mustard seed
- 1 tablespoon whole cloves 1 tablespoon turmeric
- 5 cups sugar
How to cook:
- Clean, wash and grind the Jalapenos, green tomatoes, onions and bell peppers.
- Marinate by sprinkling 1/2 cup plain salt over ingredients and stir occasionally for 3 hours.
- Drain and dispose of accumulated liquids.
