These tasty sausage and melted provolone sandwiches are a snap to put together and can be made with grilled, roasted or pan-fried sausages. A quick slaw of cabbage, carrots, mayonnaise and pickled peppers adds a moist and spicy crunch.

  • 4 cups shredded cabbage
  • 2 medium carrots, peeled and grated
  • 3 tablespoons mayonnaise
  • 3 pickled peppers, finely chopped, plus more for garnish
  • 1 tablespoon pickled-pepper juice, or more to taste
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon black pepper
  • 4 hero or ciabatta rolls, each about 8 to 10 inches long, split
  • 1/2 pound sliced provolone
  • 4 cooked Italian sausages, at room temperature

How to cook:
  1. In large bowl, toss together the cabbage, carrots, mayonnaise, the 3 chopped pickled peppers, pepper juice, salt and pepper. Let the mixture stand for 10 minutes.
  2. Meanwhile, heat the broiler. Arrange the rolls, split side up, on a baking sheet. Line the inside of each roll with provolone. Arrange the sausages on the baking sheet next to the rolls. Put the sheet under the broiler. Cook until the cheese is bubbling and the sausages are warm, 1 to 2 minutes (make sure the rolls do not burn).
  3. Place a sausage inside each roll. Top generously with coleslaw and sprinkle with additional pickled peppers. Serve any additional coleslaw on the side.

  • 1.5 pounds (6 links) Italian pork sausage
  • 1 tablespoon olive oil
  • 2 large onion, cut in half and sliced (about 2 cups)
  • 1 medium green pepper, cut into 2-inch long strips (about 1 cup)
  • 1 medium red bell pepper, cut into 2-inch long strips (about 1 cup)
  • 6 tablespoons grainy brown mustard (or use your favorite type of mustard)
  • 1 package (17 ounces) Pepperidge Farm® Farmhouse™ Sausage Buns, split and toasted
How to cook:
  1. Cook the sausage in a 12-inch nonstick skillet over medium heat until well browned and cooked through. Pour off any fat. Remove the sausage from the skillet, cover and keep warm.
  2. Increase the heat to medium-high. Heat the oil in the skillet. Add the onions and peppers and cook until the vegetables are lightly browned and tender-crisp, stirring occasionally.
  3. Spread the mustard on the buns. Serve the sausage, peppers and onions on the buns.

  5. You can also grill the sausage on your grill or use a grill pan instead of a skillet on the stovetop. If toasting the buns on the grill or grill pan, brush the cut sides of the buns with a little olive oil first.

Soooooo yummy. I'm posting this for ZWT 2006 (Italian region) This is a very hearty sandwich but so tasty that if i'm hungry, even having the small appetite that I do, I can down one and a half of these buggers. Guys and kids love these. This is also easy to double if you have more people to feed.

How to cook:
  1. To prepare the onion-pepper mixture, slice the peppers into long strips about 1/2 inch thick and thinly slice the onions.
  2. Sauté both together in a heavy pan in a few tablespoons of olive oil until they are soft and onions are beginning to turn golden brown.
  3. Make a garlic butter by mashing together about two cloves of roasted garlic (if you don't want to roast it yourself, jars of roasted garlic can be found at most grocery stores these days) with 4 tablespoons of olive oil.
  4. Grill or pan fry the sausages until cooked through (it helps to preboil them for about 5 minutes; it cuts down on the grease and grilling/frying time); slice the buns and grill lightly once the sausages are ready; alternatively, the buns can be lightly browned in either a toaster or a hot lightly oiled pan.
  5. Brush the buns with the garlic butter, carefully put 1/4 cup mozzarella on one side of each bun and place in each bun a sausage and a good amount of the pepper-onion mixture and serve hot.

  • 1 tablespoon onion soup mix
  • 1 French roll, split

How to cook:

  2. Place roll halves, cut side up, on an ungreased baking sheet; top with sausage mixture and cheese. Broil 4 in. from the heat for 1-2 minutes or until cheese is melted.
