  • 1 and 1/4 cups Full fat coconut milk
  • 2 whole eggs
  • 1 teaspoon vanilla extract
  • 1 cup Zócalo Sweet Potato Flour
  • 1 and 1/2 cups whole wheat pastry flour
  • 1 and 1/2 cups unsweetened shredded coconut
  • 2 teaspoons baking powder
  • 3/4 teaspoon Matiz Sea Salt
  • 1/4 cup coconut oil (melted)
  • 3/4 cup sugar
How to cook:
  1. In a medium bowl, mix the coconut milk, eggs and vanilla, and then add the sweet potato flour until combined. Set aside for one hour to “rest" at room temperature. This will hydrate the flour fully and makes the bread more moist after baking.
  2. In the meantime, preheat oven to 350 degrees F and line a loaf pan with parchment paper. If you don’t have parchment, rub the inside of the pan with coconut oil.
  3. Whisk together the wheat flour, shredded coconut, baking powder and salt. Set aside.
  4. Once the sweet potato flour is done resting, stir in the sugar and melted coconut oil. Now add the wet mixture to the dry and mix until just combined. Pour into prepared pan.
  5. Bake for about an hour, or until a toothpick inserted in the center comes out clean. Begin checking bread for doneness after about 45 minutes. Once done, let sit for 30 minutes to cool, then remove from pan and allow to cool completely on a rack. Serve with butter or coconut cream.

Ingredients:
  • 1 cup sweet potato (mashed)
  • 1 and 1/2 cups almond meal
  • 1/2 cup coconut flour
  • 1 and 1/2 tsp bicarb soda
  • 1/2 tsp salt
  • 3 tbsp psyllium husk
  • 5 eggs
  • 1/4 cup coconut oil (measured melted)
  • 1 tbsp apple cider vinegar
  • 1/3 cup flaxseed (- whole brown flaxseed)
How to cook:
  1. If you haven't done this yet, steam/boil/roast your sweet potato until soft, mash then allow to cool to room temperature (I usually steam it for this recipe).
  2. Preheat your oven to 200 C, fan forced. Line a small deep loaf pan with baking paper. My loaf pan was 10cm x 20cm.
  3. In a large mixing bowl, combine the almond meal, coconut flour, flaxseeds, bicarb soda, salt and psyllium.
  4. In another bowl, whisk the eggs and then whisk through the coconut oil, vinegar and the mashed sweet potato until they're combined as best you can - the sweet potato will still be a bit lumpy.
  5. Pour the wet ingredients into the dry ingredients and thoroughly combine everything.
  6. Scoop the mixture into your loaf pan and smooth the mixture in so there are no gaps the the top surface is even. Tip: wet your fingers and use it to press the "dough" in.
  7. Let the mixture sit for at least 15 minutes to allow the psyllium to swell up, become stretchy and do its thing as a binder.
  8. Bake for approximately 40-45 minutes or until the top has risen, turned dark golden brown and the centre feels firm to touch.
  9. Remove the bread from the oven and take it out from the loaf tin (carefully - wait 5 minutes so you can touch the bread without burning yourself) and place it back in the oven, directly on the wire oven rack. Then turn off the oven and let the bread continue to cook a little as the oven cools down, for at least an hour*.
  10. When the bread is cooled to room temperature, store in an airtight container in the fridge, or alternatively slice and freeze for when you need it.

How to cook:
  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 10-inch tube pan.
  2. Mix flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a bowl.
  3. Beat butter in a large bowl using an electric mixer until creamy, about 2 minutes. Gradually beat sugar into creamed butter until fully incorporated, about 3 more minutes. Add eggs, 1 at a time, beating each egg completely before add the next. Beat in sweet potato and vanilla extract until well mixed. Stir flour mixture, coconut, and walnuts into butter mixture until just combined. Pour batter into the prepared tube pan.
  4. Bake in the preheated oven until a toothpick inserted into the bread comes out clean, about 1 hour 10 minutes.
