- 4-5 slices bacon (, (cut into thin pieces before cooking))
- 8-10 mushrooms (, sliced thin)
- 1/4 cup red onion (, chopped)
- 3 Tablespoons bacon grease ((approx. from cooked bacon))
- 1 head Swiss chard ((I used red chard), chopped and divided (stems separated from leaves))
- 1 teaspoon minced garlic
- Salt and Pepper to taste

- Stack bacon pieces on top of each other. Using a sharp knife, slice into thin strips. Place bacon pieces (sliced) into a large skillet. Cook on medium-high heat, stirring occasionally, until bacon pieces begin to brown (3-4 minutes). Leave all bacon grease in the skillet.
- Add chard stems, sliced mushrooms and chopped red onion. Continue to cook until chard stems become slightly tender (3-4 mins).
- Add chopped chard leaves, and stir to combine. Continue to cook on medium heat, stirring occasionally, until leaves have wilted and are cooked through (2-3 minutes).
- Add minced garlic and stir to combine. Cook for 1 minute, being careful to not burn the garlic.
- Add salt and pepper to taste, then serve while hot.

- 1 LB Swiss Chard (wash, drain, chop the size of spinach leaves)
- 1/2 PKG Bacon (cook, drain, crumble - save bacon fat!)
- 1/2 Cup Italian Seasoned Breadcrumbs
- 1 Cup Heavy Cream
- 2 Cloves Garlic (crushed)
- 1/2 Cup Shredded Mozzarella Cheese
- 2 TBS Butter
- Salt & Pepper (to taste)
How to cook:
- Pre-heat oven to *400. In the pan you cooked the bacon in, the one with the fat left over, toss in your chopped Swiss Chard and butter. Cook until wilted. About 3 minutes.
- While that's going, bring cream and garlic to a boil in a medium saucepan. Remove from heat. Stir in salt and pepper.
- Place wilted chard in an oven safe dish. I like my cast iron pan.
- Pour warmed cream mixture over the top. Add bacon and cheese over the top of that evenly.
- Finally, sprinkle with breadcrumbs and top off with a bit more salt & pepper. Bake for 20 minutes or until top is all bubbly, warm, brown, yummy.
- Serve hot!

- 1 prepared pie crust dough (homemade or store bought)
- 3 eggs
- 1 cup heavy cream (or a mix of milk and cream)
- 1 cup grated cheddar cheese
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 4 slices bacon
- 1 small yellow onion (diced)
- 8 oz. Swiss chard leaves and stems (chopped, or other leafy green such as spinach or kale (about 4 cups))

- Preheat your oven to 400 degrees F.
- Line a quiche pan or pie pan with prepared pie crust. Crimp edges and place parchment paper inside, and fill with pie weights (or alternative, such as dried beans).
- Blind bake your pie crust halfway by placing the pie pan on a rimmed baking sheet and baking for 15 minutes. Remove from oven and remove pie weights/beans and save for another time and discard parchment paper. Turn oven temperature down to 375 degrees F.
- Meanwhile, in a large bowl. whisk together the three eggs and heavy cream (1 cup) until smooth. Stir in the grated cheddar cheese (1 cup), kosher salt (1/2 teaspoon), and black pepper (1/4 teaspoon). Set aside.
- In a large skillet, cook the four strips of bacon until crispy. Set aside on a paper towel lined plate.
- Remove all but two tablespoons of the bacon grease from the skillet. Add the diced onion and sauté over medium-high heat until softened and starting to brown, about 3 minutes.
- Add the Swiss chard and sauté until both the leaves and the stems are tender and most of the liquid has evaporated, 5-7 minutes.
- Meanwhile, chop up the bacon slices. Add them to the skillet when the chard has finished cooking.
- Place the chard and bacon mixture in the bottom of the half-baked pie crust. Spread out evenly.
- Pour the egg, cream, and cheese mixture on top. Spread it out evenly, ensuring especially that the cheese evenly coats the top.
- Bake the quiche at 375 degrees for 20 minutes, or until browned on top and filling is firm when you shake it slightly.
- Allow to cool for 10 minutes at least. Cut into 8 slices and serve warm or at room temperature.

- 4 stalks Swiss Chard, Prepared As Directed Below
- 2 strips Thick Bacon, Cut Into 1/2-inch Pieces
- 1 clove Garlic, Minced
- ⅛ teaspoons Crushed Red Pepper Flakes
- ¼ cups Water
- ½ teaspoons Red Wine Vinegar (or More To Taste)
How to cook:
- Prepare chard by separating the tender green leaves from the stems, keeping both parts. Slice stems crosswise into 1/2-inch thick slices; slice tender leaves crosswise into 3/4-inch thick strips. Keep separate.
- In a large skillet over medium-high heat, saute bacon until your desired level of doneness. I like it to stay a little on the chewy side. Lower heat and remove bacon from pan; reserve. Add garlic and crushed red pepper flakes to the bacon drippings that are left over in the pan; stir for about 30 seconds, or until you can smell the garlic. Immediately add the chopped stems and water to the pan. Increase heat back to medium-high and stir frequently until most of the water evaporates. Add the sliced leaves to the pan and stir constantly for about a minute until the color deepens and the leaves wilt a little.
- Remove from heat and add the reserved bacon and red wine vinegar, stirring well to combine. Taste and add salt and pepper if needed. Serve immediately.
