Ingredients:
  • 1 pound ground beef
  • 1 taco seasoning packet (or homemade taco seasoning)
  • 2/3 cup water
  • 1 9 1/4 oz bag Fritos
  • 1 14 oz can corn (drained)
  • 1 14 oz jar salsa
  • 2 cups shredded cheese of choice (I used Mexican blend)
  • kosher salt, pepper
  • Toppings of choice: lettuce, sour cream, hot sauce

How to cook:
  1. Set a large cast iron or oven proof skillet over medium heat and add the ground beef. Cook 6 to 7 minutes or until brown, drain excess grease. Add the taco seasoning and 2/3 cup water. Cook a few more minutes and remove from heat.
  2. Add to the skillet half the bag of Fritos, corn, salsa, 1 cup of the cheese, kosher salt, and pepper. Stir until evenly mixed. Top with remaining cheese and bake in a 400 degree oven 15 to 20 minutes.Note: If your skillet is not oven proof, transfer this to a 9x13 casserole dish before topping with the cheese. Once it's in the casserole dish top with remaining 1 cup cheese and bake.
  3. Serve with the remaining Fritos over top along with additional toppings such as lettuce, sour cream, and hot sauce.

How to cook:
  1. Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  2. In 12-inch nonstick skillet, cook beef and onions over medium-high heat, stirring frequently, until brown; drain. Stir in seasoning mix and water. Heat to boiling. Reduce heat to medium; simmer uncovered 3 to 4 minutes or until thickened. Stir in enchilada sauce and black beans; cook 1 to 2 minutes or until heated through.
  3. Place 4 cups of the corn chips in single layer in baking dish. Top with 1 cup of the cheese; spoon beef mixture over cheese, then top with remaining 1 cup cheese.
  4. Bake 18 to 20 minutes or until cheese is melted and edges are bubbly. Top with remaining corn chips and the green onions. Serve with sour cream and guacamole.

  • 1 pound ground beef (80-85% lean)
  • 1/2 cup red onion, minced
  • 1 (15 oz.) can black beans, drained
  • 1/2 cup salsa verde
  • 1 (10 oz.) can diced tomatoes with green chilies (Rotel or store brand)
  • 4 Tablespoons homemade taco seasoning (or one packet of your favorite store brand taco seasoning)
  • 1/2 (9.25 oz.) bag of Fritos original corn chips (can use crushed Doritos or tortilla chips, if preferred)
  • 2 cups freshly shredded cheese, ( I blend extra sharp Cheddar Cheese & Monterey Jack.)
  • optional: 1 teaspoon Homemade Southwest Seasoning for added spiciness
  • shredded lettuce
  • diced tomatoes
  • sliced green onions
  • black olives
  • diced avocado
  • thinly sliced jalapeno
  • sour cream
  • guacamole

How to cook:
  1. Preheat
  2. oven to 350° and grease an 8x8 or 9x9 baking pan.
  3. Brown
  4. the ground beef and onions. Drain the fat.
  5. Add
  6. ground beef back to skillet and stir in the drained can of black beans.
  7. Mix
  8. in the Rotel and salsa verde.
  9. Stir
  10. in the taco seasoning and optional Southwest seasoning.
  11. Use my homemade taco seasoning for best flavor and healthy ingredients or choose your favorite store brand taco seasoning.
  12. Heat
  13. over medium heat until the mixture is heated through.
  14. Pour
  15. ground beef mixture into prepared baking pan.
  16. Sprinkle
  17. freshly shredded cheese over the top.
  18. Spread
  19. Fritos corn chips over the shredded cheese.
  20. Bake
  21. at 350° for 15 to 20 minutes or until cheese is melted.
  22. Remove
  23. from oven.
  24. Top
  25. with your choice of toppings from the suggested list.
