Ingredients:
- 1 pound ground beef
- 1 taco seasoning packet (or homemade taco seasoning)
- 2/3 cup water
- 1 9 1/4 oz bag Fritos
- 1 14 oz can corn (drained)
- 1 14 oz jar salsa
- 2 cups shredded cheese of choice (I used Mexican blend)
- kosher salt, pepper
- Toppings of choice: lettuce, sour cream, hot sauce

- Set a large cast iron or oven proof skillet over medium heat and add the ground beef. Cook 6 to 7 minutes or until brown, drain excess grease. Add the taco seasoning and 2/3 cup water. Cook a few more minutes and remove from heat.
- Add to the skillet half the bag of Fritos, corn, salsa, 1 cup of the cheese, kosher salt, and pepper. Stir until evenly mixed. Top with remaining cheese and bake in a 400 degree oven 15 to 20 minutes.Note: If your skillet is not oven proof, transfer this to a 9x13 casserole dish before topping with the cheese. Once it's in the casserole dish top with remaining 1 cup cheese and bake.
- Serve with the remaining Fritos over top along with additional toppings such as lettuce, sour cream, and hot sauce.

- Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
- In 12-inch nonstick skillet, cook beef and onions over medium-high heat, stirring frequently, until brown; drain. Stir in seasoning mix and water. Heat to boiling. Reduce heat to medium; simmer uncovered 3 to 4 minutes or until thickened. Stir in enchilada sauce and black beans; cook 1 to 2 minutes or until heated through.
- Place 4 cups of the corn chips in single layer in baking dish. Top with 1 cup of the cheese; spoon beef mixture over cheese, then top with remaining 1 cup cheese.
- Bake 18 to 20 minutes or until cheese is melted and edges are bubbly. Top with remaining corn chips and the green onions. Serve with sour cream and guacamole.

- 1/2 cup red onion, minced
- 1 (15 oz.) can black beans, drained

- 1 (10 oz.) can diced tomatoes with green chilies (Rotel or store brand)
- 4 Tablespoons homemade taco seasoning (or one packet of your favorite store brand taco seasoning)
- 1/2 (9.25 oz.) bag of Fritos original corn chips (can use crushed Doritos or tortilla chips, if preferred)
- 2 cups freshly shredded cheese, ( I blend extra sharp Cheddar Cheese & Monterey Jack.)

How to cook:
- Preheat
- oven to 350° and grease an 8x8 or 9x9 baking pan.
- Brown
- the ground beef and onions. Drain the fat.
- Add
- ground beef back to skillet and stir in the drained can of black beans.
- Mix
- in the Rotel and salsa verde.
- Stir
- in the taco seasoning and optional Southwest seasoning.
- Use my homemade taco seasoning for best flavor and healthy ingredients or choose your favorite store brand taco seasoning.
- Heat
- over medium heat until the mixture is heated through.
- Pour
- ground beef mixture into prepared baking pan.
- Sprinkle
- freshly shredded cheese over the top.
- Spread
- Fritos corn chips over the shredded cheese.
- Bake
- at 350° for 15 to 20 minutes or until cheese is melted.
- Remove
- from oven.
- Top
- with your choice of toppings from the suggested list.
- Serve
