Ingredients:
  • 1 cup canned black beans (drained)
  • 1 cup meat-free crumbles ((I used Boca))
  • 1 cup whole wheat rotini (dry)
  • 2 large roma tomatoes
  • 2 large green onions
  • 1 large jalapeño
  • 2 oz colby jack cheese (cubed)
  • 1 tbsp fresh lime juice
  • 1 tsp dried cilantro
  • ½ tsp cumin
  • ½ tsp paprika
  • ½ tsp cayenne powder
  • ½ tsp garlic powder
  • ½ tsp turmeric
  • ½ tsp salt
  • ½ tsp black pepper
How to cook:
  1. Boil the rotini to al dente. Then drain and rinse in cold water.
  2. Heat the meatless crumbles for about 30 seconds in the microwave to defrost but not heat through. Season with cilantro, paprika, garlic powder, cayenne, cumin, turmeric, salt and pepper.
  3. Drain and rinse your canned black beans.
  4. Dice the tomatoes. Mince the jalapeños. And slice the green onion.
  5. Add the pasta, seasoned meatless crumbles, black beans, and vegetables to your medium mixing bowl with the lime juice drizzled over top. Toss to combine.
  6. Chill until ready to serve.

  • 16 oz rotini pasta ((or other medium sized noodle))
  • 1 lb ground beef
  • 3 TBS taco seasoning
  • 1.5 cups chopped tomatoes
  • 1 cup diced green bell pepper
  • 2-3 cups Mexican Style Shredded Cheese
  • 4 cups shredded lettuce ((you can buy this already shredded at some stores))
  • 15 oz French Dressing
  • 3 cups slightly crushed nacho cheese or tortilla chips

How to cook:
  1. Bring a large pot of water to boil. Cook rotini noodles according to package directions. Rinse off in cold water.

  3. Mix in taco seasoning.

  5. Pour French Dressing over the top.
  6. Stir everything together.

  • 1 package taco seasoning (3 tablespoons)

How to cook:
  1. Bring a large pot of salted water to a boil. Add the pasta and cook to al dente, about 8 minutes.
  2. Pour the cooked pasta into a strainer and rinse with cold water. Set aside while the remaining ingredients are prepped.
  3. Add the ground beef to a skillet over medium heat. Cook until browned, about 7-10 minutes. Drain the fat from the cooked beef.
  4. Add ⅔ cup of water and the taco seasoning. Return to the stove over medium low heat and cook, stirring occasionally, until the sauce has thickened. Remove from heat and let the beef cool for 10 minutes before adding to the pasta.
  5. Add the cooked pasta to a large bowl. Add the beef and tomatoes to the pasta and stir to combine. Add the cheese, green pepper, onion and cilantro and stir again.
  6. Finally, add the lettuce and Catalina dressing and stir until evenly incorporated.
  7. Serve immediately, garnished with corn chips or Doritos.
