Ingredients:
  • 2-3 T avocado or olive oil
  • 1 large sweet potato, peeled and cut into 1 1/2 inch cubes
  • 1 lb grass-fed ground beef
  • 1/2 yellow onion, diced
  • 1 green bell pepper, diced
  • 4 cloves of garlic, minced
  • 1 1/2 tsp salt
  • Freshly cracked pepper
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/4 tsp dried oregano
  • pinch of red pepper flakes (optional)
How to cook:
  1. Heat a T of avocado or olive oil in your cast iron skillet; when hot add ground beef and cook, breaking up with the back of your spoon until fully cooked and crumbly.
  2. Drain any excess grease (if there is any), then add in sweet potatoes, onion, garlic, bell pepper, and spices. Reduce heat to medium and cook for 10 -15 minutes, stirring every few minutes, until sweet potatoes are fork tender. Add more oil if necessary.
  3. Serve with eggs and avocado!

  • 2 tbsp olive oil
  • 2 cups chopped sweet potato
  • 1/2 cup chopped red onion
  • 1 lb. 96% lean ground beef
  • 1 tbsp ground cumin
  • 1/2 tsp chili powder

  • 4 cups fresh spinach
  • 1/2 cup salsa
  • 1/2 cup chopped cilantro

How to cook:
  1. Heat olive oil in a large pan or Dutch oven over medium heat. Add sweet potatoes and cook for 10 minutes covered, stirring occasionally.
  2. Move sweet potatoes to one side and add ground beef. Use a spatula to break ground beef into small pieces. Stir in onion and dry seasonings. Cook uncovered for 10 minutes, stirring occasionally.
  3. In the meantime whisk together eggs and unsweetened almond milk in a medium mixing bowl.
  4. Add spinach to pan and turn the heat off. Cover with lid and allow spinach to wilt for 2-3 minutes.
  5. Divide hash between the large compartments of 4 MPOF white containers.
  6. Wipe pan clean and heat the remaining tablespoon of olive oil over medium heat. Pour in eggs and cook for 5-6 minutes, stirring regularly.
  7. Divide scrambled eggs between 4 small compartments and season with salt and pepper. Place 1 small cup of salsa in the remaining small compartments and add cilantro alongside the salsa.

How to cook:
  1. Boil potatoes in water until tender but not too soft/mushy (about 5-7 minutes). Drain water then set potatoes aside.
  2. In a large (32cm) non-stick skillet over high heat, cook ground beef until browned. Drain off fat. Put cooked beef in a separate bowl and set aside.
  3. In the same skillet (now empty) over medium heat, fry together vegetable oil, onion, potatoes, Italian seasoning, minced garlic, salt and pepper. Toss well to evenly coat potatoes and onions in seasoning. Cook (stirring often) until potatoes and onions have started to brown (about 5 minutes).
  4. Add ground beef back to the skillet and stir well to mix. Add cheese and stir until melted.
  5. Remove from heat. Serve hot.
  6. Store leftovers in a sealed food storage container in the fridge for 4-5 days.
