- 9 cups (237g) Rice Krispies Cereal
- 20 ounces (566g) mini marshmallows, divided
- 8 tablespoons (113g) unsalted butter
- 1 teaspoon (15ml) vanilla extract

- Line a 9x13-inch pan with foil or parchment and spray with nonstick cooking spray.
- Measure out cereal and place in a large bowl.
- Measure out 15 ounces (1 ½ packages) mini marshmallows and set aside.
- Melt the butter in a large pot over medium low heat. Continue cooking the butter, stirring occasionally, until the butter browns. This will take 3-7 minutes depending on the size of your pan, but just watch it – it’ll foam then reduce and little brown flecks will form in the bottom of the pan.
- Once the butter is browned, add the marshmallows and stir until melted. Remove from heat and stir in vanilla extract.
- Add cereal and stir to coat with the marshmallow mixture. Stir in remaining marshmallows and immediately pour into prepared pan. Press firmly to compact. Tip: spray wax paper with nonstick cooking spray so you can press without it sticking to your hands.
- Let set until firm then slice into bars. Store in an airtight container for up to 3 days. To freeze, let cool completely then cut into bars and wrap each individual bar in wax paper and freeze in an airtight container for up to 3 months.

- Grease a 9x13 casserole pan with butter, set aside.
- In a large, light colored, heavy bottomed pot, like an enameled dutch oven, melt butter over medium heat. (If you want to brown your butter for a richer flavor, follow these directions before continuing on to step 3: How To Brown Butter)
- Once melted, add 2 bags of the marshmallows and stir until marshmallows are melted and the mixture is completely melted and smooth.
- Remove from heat, then immediately stir in the vanilla extract and salt. Fold in crispy rice cereal, moving quickly and then fold in remaining bag of mini marshmallows.
- Pour mixture into prepared pan. Using a buttered spatula, lightly press them into pan. Do not press them down too much, just spread them out. If you press them down too much they will become very dense and not as fluffy.
- Allow treats to rest for at least 1 hour at room temperature too cool. Slice into squares or cut into shapes and store any leftovers in an airtight container for up to 4-5 days.

- 5 Tablespoons butter ((I use salted butter))
- 8 cups mini marshmallows (divided)
- 6 cups Rice Krispie cereal
- 1/8 teaspoon salt (optional)
How to cook:
- Line a 9x9-inch pan with aluminum foil. Spray foil with non-stick spray, set aside.
- In a large pot, over medium-low heat, melt the butter. Once butter is melted add 6 cups mini marshmallows and salt (if using). Stir constantly until marshmallows are melted.
- Remove from heat and stir in Rice Krispie cereal. Stir until just barely coated in marshmallow mixture. Now stir in the remaining 2 cups of mini marshmallows.
- Pour mixture into prepared pan and press evenly into the pan.
- Allow to cool completely before cutting into squares. Serve and enjoy!

- Butter your 9 x 13 x 2 inch baking pan, or line with parchment paper.
- Melt butter in a large saucepan over low heat. Once the butter is melted, add the marshmallows (minus 1 cup for later) and stir to coat well. Continue stirring until all of the marshmallows are melted, then remove from heat.
- Stir in the vanilla, then add the rice krispies cereal and the remaining 1 cup portion of marshmallows. Gently fold in and stir until all of the cereal is coated with the melted marshmallow.
- Transfer the coated cereal to your prepared pan, then use a buttered spatula, waxed paper, or dip your fingers in water or butter to gently press the rice krispies cereal down into an even layer. *Do not pack the cereal in firmly, as it will make for hard rice krispies treats.
- Set the treats out and let them cool for at least an hour before slicing and serving.
